Yes. You may even use butter. As long as it isn't coated to heavily. Also it depends on if you wrap your potato also. If you do, butter would work best, if not wrapping use the oil. Any oil should work, you could even use a lard or Crisco.

I never use oil to bake my potato in the oven.
If you are looking to make a baked potato, just slice 1/2 way through the potato ~ add a little butter in the center if you like, wrap it w/ foil and bake. :)
You can make a baked potato in the microwave much faster. Just put a potato in a bowl with a little water in it - cover w/ pastic wrap bake about 5 minutes and wah-lah! :)

try putting some garlic cloves in the potato, and then applying the vegetable oil. it makes tummys happy!!!!
