For quickly making a short list of cameras that you'll find interesting, use this database: http://www.dpreview.com/reviews/compare.asp
For comparing the specs of various cameras side-by side, use this page: http://www.dpreview.com/reviews/sidebyside.asp
For in-depth reviews of specific models, again use
dpreview, or if they don't have a full review, use this site: http://www.steves-digicams.com/hardware_reviews.html
If it were my money, for my kind of photography, I'd get a Nikon D50 with the 18-55mm kit lens. It's one of the cheapest digital SLRs out there, it's fantastic, and the responsiveness of this camera will blow any compact or prosumer job out of the water. The only down side, is that you won't have cash left over for a second lens.
Happy shopping!

edit: for on-line shopping, use B&H, Ritz, Wolf, or BeachCameras. These places are all super reliable, they provide good service, and they won't overcharge you.
Obviously, for real world shopping and hands on play time, I'd have to know your location.

Your looking at the entry lebel DSLR price range and here are the ones in that range.
Pentax *ist DL $599 - $100 rebate = $499
Nikon D50 $699
Pentax K100 $699 (Brand new, released this week)
I have shot Pentax now for 3 yrs, and shot nikon film for 10 yrs previous. Both are excellent cameras.
