I thought that religions were basically ideas about what happens when you die. Does that mean that all americans have to be christians and can't decide what religion to choose? ?

Of course not. A religion is an idea about God, afterlife, the Universe, etc. Everyone is free to choose their own. Having said that, some religions can be called regional because they're most commonly found in a specific area. Hinduism is mostly found in India, for instance. Most Americans are Christian. That doesn't mean you can't have a Christian Indian or a Hindu American, however.

a religion should be a way of life and worship, not a focus on dying.

Catholicism, translated, means "Universal." I've been all over the world and it is amazing to see how similar things are with our faith.
