Chicken Fried Round Steak

Ingredients

(6 servings)

2 lb Round steak, 1/2" thick
2 Beaten eggs
2 tb Milk
2 c Cracker crumbs
1/4 c Shortening
Salt
Pepper


Instructions

Cut steak into serving pieces.Pound steak thoroughly.Mix eggs and milk.Dip meat into egg mixture,then into cracker crumbs. Brown,slowly,on both sides in hot shortening.Season with salt and pepper to taste.Cover,tightly,cook over very low heat 45 to 60 minutes or until tender.Serve with South Gravy over steaks.Makes 6 servings.


Crockpot Round Steak Italiana

Ingredients

(6 servings)

1 1/2 lb Round steak
15 1/2 oz Spaghetti sauce w/mushrooms
1 ts Salt
1/2 ts Oregano
1/4 ts Pepper
16 oz Can whole small onions


Instructions

Cut steak into 5 or 6 serving-size pieces. Coat with salt, oregano, and pepper. In crock-pot pour spaghetti sauce over the meat. Cover and cook on low for 7 to 9 hours or until meat is tender. Turn control to high; add onions. Cook on high for 10 to 15 minutes. Serve with Italian green beans and toasted garlic cheese bread... Makes 5 to 6 servings...

It makes wonderful Swiss steak, Coat with flour brown in skillet, then put in dutch oven add a little water to the browned flour left in frying pan and some cut up onions and celery bring water to boil and pour over your meat let cook over med to low heat for 1 hr or until real tender. If you like tomatoes in your Swiss steak add a can of those. Juice over meat will thicken to a gravy, some mashed potatoes and a veggie, oh what a meal.

Anything you might think of. It makes great beef stew if you cut it into chunks, but if you marinate it long enough, it can be grilled like a regular steak.

Try marinating it for about 4-5 days in Worcestershire sauce, lemon juice, garlic powder and onion powder. If you have a personal marinade you could use it as well.

Round steak is a less tender cut of meat that has more muscle in it but is very tasty. It's best marinated sliced to be used in stir fry, stroganoff, dishes like that, although I like chewy steak as is.
