The best advice is to follow "Basic Strategy", meaning you play to prescribed set of rules that increase your mathematical advantage.
Regardless of what the dealer shows you need to know that hitting a 16 will statistically be an advantageous play in the long run.
Basic Strategy has you hitting on a 16. If you are truly a novice, or you don't have enough experience to have memorized Basic Strategy plays, you can get a Basic Strategy card from the casino gift shop and keep it on the table with you. You can then refer to it whenever you need advice on how to play a hand.
Experienced players would much rather have a player slowing down the game (fewer hands means less opportunities to lose) by checking the reference card than to have some fool making bone-head plays and ruining the table.
Play Basic Strategy. If you really want to get good, get a book called Knock-Out Blackjack, teach yourself how to count cards, then go to Binion's Horsehoe Casino in Downtown Vegas where they have 1 and 2 deck, affordable blackjack.

Psychology studies have shown that people hate to be responsible for bad things that happen to them. This means that when given the high likelihood of busting by hitting a 16, lots of folks will STOP and FAIL to hit - even though that is exactly what they should do. YOU WILL WIN BY HITTING MORE OFTEN THAN YOU WILL LOSE BY NOT HITTING.
People feel better when bad things are done to them (passively), then they can't blame themselves for the outcome. This is why even though blackjack only has a 2.5% advantage to the house, casinos regularly make 13% off of betters - they are afraid to 'mess up' by hitting, and so they play foolishly.
Take the hit. Be active.

Sure as s**t he has an 18. You gotta be a man and hit that. Hit a 16 if dealer is showing 7 or over. Otherwise you ought not to be playing. I don't care if the newbies at the $3 table give you dirty looks...you gotta do what's right.
Study up your tables and you won't have any qualms about what to do at the table. It will be automatic.

Honestly, it pains me to do it but I take the hit. It is just a sickening feeling to look down and see a 16 in front of me when the dealer does not have a 4-6 up.

Always play that the card down is a 10 and the card being drawn is a 10...unless you can count cards...then do your thing. So in your example, he will not hit...so you have no choice but to take the hit....even though your assumption is next card it 10.
