does anyone know any good recipes for dinner rolls and bread made with live yeast? all i can find is dry and all i have is live and i cant find any good recipes for it

the thing of yeast i have is like in bulk its one big squre about the size of 2 cigarette boxes put together

live yeast comes in foil-wrapped packages and feels like clay. You just have to be a little more careful with the water temp. Dry yeast goes into 110 temp water. Live yeast goes into 90 degree water.

Both are packaged as for equivalents. That is a live yeast cube is equal to 1 dry yeast pkg.

Never had much luck with that fast-rising kind of yeast.


The following recipe works best halved................

One-Hour Dinner Rolls

2 cakes compressed yeast
1/4 cup warm water (85 degreess for compressed)
(110 degrees for dry)
1-1/2 cups buttermilk, lukewarm
1/4 cup sugar
1/2 cup cooking oil
1/2 cup melted butter for pan
1 teaspoon salt
4-1/2 cups flour
1/2 teaspoon baking soda
Butter

Dissolve yeast in warm water.

Combine buttermilk, sugar, cooking oil, salt.

Sift flour and soda into large bowl.

Mix yeast with lukewarm buttermilk and add to flour mixture. Mix well. Allow to stand for 10 minutes.

Roll moist dough out on floured surface to 1/2 inch thick.

Cut into desired shapes for breads.

Place in cooking pan full of butter. Turn each bread over to coat each one.

Allow to stand 30 minutes and bake at 425 degress for 10-12 minutes until brown on top.

yeast dough is an experiment where you live. In the Panhandle of Texas I do this recipe just like I typed it.

In Houston because of the humidity I use the halved recipe I mentioned about, start with a package of dry in the hotter water and also add 1 cake of live yeast crumbled in the mixing bowl, pouring the water/dry yeast mixture into the bowl.

1 square = 2 pkgs. The 2 packages are in 3's, so it would be 6 packets. We have a recipe that calls for one square of yeast (live) and use 6 packets (2 pkgs.). If you are using the dry yeast out of a jar then 2 1/4 tsp. = 1/4 oz. packet.

White Bread
2 pkgs. active dry yeast (I use fresh)
4 cups warm water
1/4 melted shortening
1/2 c. dry milk
1/4 c. sugar
4 tsp. salt
10-11 c. flour

Combine everything, except flour.
Stir in flour to make a stiff dough.
Knead for 10 min.
Put in greased bowl. Cover. Let rise to double.
Divide into 4-5 equal sized balls. Put balls on greased cookie sheet.
Let rest for 1/2 hr. covered with towel.
Shape into loaves,place in 9x5 pans. Rise until double.
Bake@350-375 for 40 min.

I found out that the best way to do this recipe is by experimenting with it. It's an old recipe.
