no, i don't think so. they could be made by aged cheese, but the cheese is aged on purpose.

I'm sure the FDA would be interested to know about it.
Besides, how would a food company ensure a steady supply of old cheese for making their snack crackers? And, each day, the old cheese would have to be the same age as the day before? You can see, I think, how silly that it. I feel certain Goldfish crackers are made from fresh ingredients, every day.
P.S. aged cheese is not exactly the same thing as old cheese.

not old, it's aged. when aging cheese, the flavor gets more pungent so it tastes stronger for a longer period of time

Does it matter? I eat them, never got sick and they taste good. That's good enough for me. Besides, ever think of what things are made of when you are eating them? Like a hamburger? Yeah, I chose to just eat and enjoy them.
