QUIZNO's Broccoli and Cheese Soup
This soup serves 6 and can be easily doubled. It is unbelievably delicious!!
2 Tbsp. butter
1 med. onion, chopped
2 garlic cloves, crushed
1/2 cup butter
1/2 cup flour
1 qt. half-and-half
1 qt. chicken stock or bouillon (I use SUPERIOR TOUCH BETTER THAN BOUILLION CHICKEN BASE)
1 lb. fresh broccoli (I use a whole rubber-banded bunch) washed, cut up and save the stems for the salad
2 cups carrots, grated
salt and pepper to taste
1/4 tsp. nutmeg
8 oz. grated sharp cheddar
1. Saute onion in butter. When onions are golden, stir in garlic and cook for 3 more minutes. Set aside.
2. In another pan melt the 1/2 cup of butter and stir the butter and flour (make a roux) using a whisk over med. heat for 3-5 minutes. Stir constantly and slowly add the half-and-half. Add the chicken stock whisking all the time. Simmer for 20 minutes.
3. Add the broccoli, carrots and onions. Cook over low heat till veggies are tender for 20-25 minutes. Add salt and pepper.
4. Pour in batches into osterizer (blender) and puree.
5. Return to pot and add the grated cheese and stir till well blended.
6. Put on low heat and stir the nutmeg.

They both look crap . Here's my recipe which you can tweak to taste. Melt a large tablespoon or two of butter in a pan. Add a chopped onion and a peeled and chopped clove of garlic if you want. Wash and chop a head of broccoli-use the leaves and all the stems and add to the pan together with pint or so of cold water. If you have vegetable stock i.e. if you have saved any of the water that other vegetables had been boiled in then you could use that instead. I usually just add a vegetable stock cube. Simmer and when the broccoli is cooked (soft) turn the heat off and add your previously grated cheese. Stir well and transfer to a blender and blend until smooth. Taste for seasoning-salt and pepper perhaps a squeeze of lemon. Personally I don't use cheddar but Edam as I like the stringy texture it gives the soup. Traditionally this is meant to be broccoli and stilton soup. Anyway-enjoy.

Yield: 6 Servings
Ingredients
1 cn canned beef broth
1 cn cream of celery soup
1 c milk
1/4 c white wine
1 ts worcestershire sauce
1/4 ts garlic powder-to taste
1 salt-to taste
1 black pepper-to taste
1 1/2 c coarsely chopped broccoli
-florets
1 c grated cheddar cheese
1 tb minced parsley or dill;
-optional garnish
Instructions
Add first 8 ingredients into pan. Bring to a boil, then lower heat and
simmer for 20 minutes or until broccoli is beginning to become tender. Make
sure that broccoli is cut into bite size pieces. When broccoli is done to
proper tenderness, slowly add cheddar cheese, sting constantly until each
bit is completely blended into soup.
Before serving, garnish with a sprinkle of parsley or dried or fresh dill,
alongside some crusty French bread.
