I freeze my bread (wheat, multi-grain) so it lasts longer - and defrost slices as needed. Does freezing bread remove any nutrients?

Freezing is a good way to preserve bread.

When bread is exposed to oxygen, it stales. Going stale is the end result, but staling is a part of baking bread. that's why bakers say to let it sit before you try it. Not because of the heat, but because until the bread stales some, it tastes bland

Freezing bread halts this process. Strangely enough, refirgertating bread SPEEDS up the staling process. The best way to keep bread fresh is to freeze it fast, and let it sit on the counter.
