I have a simple method to can my peppers. Wash jars in dishwasher to sterilize and heat them. Wash peppers, clean garlic, put non-iodized salt into bowl. In a stainless steel pan, bring to a boil the brine: 1part water to 2 parts 5% acidity white vinegar. Put 1 tsp. salt in bottom of each quart jar,adjust amt. for smaller jars. Drop 2-3 sliced cloves garlic in each then add peppers, packing tightly. I try to save longer ones for top of jar. I wedge them in under the "hip" at the top to prevent floating or rising of the peppers. Pour boiling brine over top(I use a ladle ) let sit for a moment, add more brine if necessary. Add lid and close tightly. You may need to use pot holder or towel to handle jars. As they cool down you may be able to hear the occasional ping of the lids sealing. Also you should probably use rubber gloves to prevent the natural oils from penetrating hands when handling the peppers. Best of luck! Because they are not cooked they stay crispy!!!

Cold packing. Using a hot bath tends to cook the veg a bit and that's probably the cause of the 'mushy' texture. Taste wise, it's worth it. It's the only way I make my pickles and jalapenos and they sell like wildfire. Some jalapenos are simply hotter than others, even from the same plant. If the seeds are dark, the chili will be hot. It isn't something you can control unless you want to seed your jalapeno before pickling......

Nin's Hot Pepper Mix

Jalapeno peppers
Carrots strips
Pearl onions
Cauliflower

Bottom each quart jar:
1-tbsp canning salt
1-tsp oregano
3-tbsp olive oil
2-3 cloves garlic

Brine- 1 part water to 2 parts vinegar

Each jar, pack a row of peppers, carrots, onions, & cauliflower, until full
Add warm brine to jars leaving 1/4 inch headspace
Adjust two-piece caps
Process in hot water bath for 15 minutes

This was my Grandmother's pepper mix that I use today. (I called her Nin).
