Excellent question, because I love to make fried rice with my day old rice. Throw some garlic, olive oil, and some tomato paste (not sauce, not ketsup) and lightly cook the garlic. Then throw in some diced ham (or spam), carrots & peas (which you can find in the frozen section of your grociery store, thawed). Cook the ham for a minute or so, and then throw the rice in. Stir until the rice looks completely coated... your good to go.

Fried rice! What else. It's what I usually make with left over rice. Have left over chicken, frozen mixed vegetables, a little garlic and onion, soya sauce, even a couple of eggs scrambled into the rice, a little salt to taste and voila!

Make fried rice, rice pudding, spanish rice, stuffed green peppers, meat balls, use it as a filler in meatloaf, pour a little hot milk over it and add some milk an cinnamon. Add it to chili or beans or make a rice and mushroom mold, make a fruit salad with it or add it to your favorite instant pudding for a great dessert.
Make a great chicken & rice soup or add it to your favorite soup, salad or casserole.
