I'm not sure about the question but if you're asking how much cooked fish to serve each person, that would be 1/4 to 1/2 pound.

Depends on the fish, the previous answer (Mr Danger) gave a general guide if you are buying fish whole and gut and fillet them yourself.
If you are buying fillets, the cooked yield depends on how you are cooking it. Poaching, steaming, or baking in foil results in less water loss than grilling or frying.
If you are buying whole fish, the bones, skin and heads make great stock for bisque and fish soups, if you boil them up with veg. and herbs, (can smell a bit) but freezes well until you are ready to use.

Not sure I understand your question. Basically 8 oz of a raw fish will yield 7.50 to 7.85 of finished product. There is very little fat in most fish.
