2 scenic options from Riverside to Sacramento:
COAST - Take coast highway up. If you haven't seen it yet, you're missing one of the best parts of California. Summer traffic is crowded though.
FOREST / MOUNTAIN - Take 99 up and detour into Sequoia and Yosemite Nat'l Parks. It's wonderful scenery, but again, crowded this time of year.
From Sac - Reno, take 50 rather than I-80. More scenic - enjoy the Sierra Nevadas, try a detour. Take Eastern shore of Lake Tahoe north and catch 395 to Reno.

Reno is beautiful and there are a few things along the way, after Reno, but I would head strait for Las Vegas, take a quick break, then head S.E. over Hoover Dam and on to the Grand Canyon, If you haven't been to the Grand Canyon before , then it is a must!

With an open you will find many places for stop overs, even the rest areas towards the way you are going are very scenic, they have picnic tables, benches, running water, etc.
When we do trips in the same route you are going, we look for little towns, big towns, of something in between and go a for lunch and most of the time we end up visiting the little town for few hours and then drive off to another one for some coffee or tea.

Go to Old Sac for sure, on the way to reno check out truckee. reno to vegas there is really nothing, although if you can drive to the california border on the way you can check out yosemite. and at the end of yosemite before you move to nv you have inoj national forest (pretty nice) and then mono lake (its a dying lake and is salt walter)
and i have a tip for you - don't go to the bathroom at gas stations, go to hotels, they won't know your not staying there and the lobby restrooms are much much cleaner.

Old sacramento is fun. While you're there, check out the CA State Railroad Museum- fantastic and inexpensive. Park once and see everything down there, you'll enjoy it.
