Your idea is a highly romantic notion and certainly not unique. And indeed there are still a few people on this planet who live entirely off the land and their surroundings whose entire ancestry has also done. You have to realize though that you don't have ANY of the benefit of the thousands and thousands of years of learning how to survive that these few remaining people do. Just as importantly no human survives indefinitely on their own partly because of our physical limitations, but also more so because of our psychological limitations.
It's those same psychological limitations that answer the first part of your question, too. Why don't people just go out into the wilderness? It really is because of a psychological attachment that we have NO real control over to comfort. Or at least perceived comfort. Talk about perception. Have you ever seen what primitive people do when introduced to a device like television? I've never personally seen it, but I have seen it documented. They just seem to forget about who they are or were and become mesmerized by it.
If you get a chance watch one of my favorite movies "The Story of the Weeping Camel". It's a recent film and was supposedly not acted meaning all the footage was real life candid filming of real events. Just pay attention to what happens at the end. It might help you see the answer to your question.
Anyways my best suggestion to you is not to take a dive off the deep end and totally flee all civilization in a emotional panic. Maybe instead you can live like me where you live within the walls of civilization , but pretty far apart. You could probably do an even better job of it than me because I still own a few things like this computer in front of me and a piano and a motorcycle. I still grocery shop at the local store. But...no TV, no cell phone, just a little bit of clothes and dishes and some tools that's everything I have.
Just a few thoughts.
Sorry about the length rendering this whole post a potential waste due to the determent caused by it's length. But if you really could make it out on your own in the wild you'd at the very least need to have the patience to read through to the end. There's not that many words here really.

Because people get sick or get hurt and need medicine. Some of the medicines are provided by nature but come from the tropics, some come from willow trees. There are so many of us on the Earth we have found more and more that we need to join together and each do a little part to keep all of us alive and well. Some people can have the luxury of living in the wilderness but not all of us. There isn't enough wilderness.

That isn't true. Please don't try it. If you do, you are liable to soon end up dead. A survivalist who can last a week in the wilderness without any modern tools and conveniences is quite good.
You might enjoy camping, hunting, and fishing, but when your tent gets a hole in it during a rainstorm, your knife blades are rusted and broken, a fish has broken your line and taken your last hook, you have the flu, and you haven't done laundry in ages, you are liable to change your mind. There's a good reason why people choose to live indoors with electricity and plumbing.
Edit:
As a further note, I recently heard a story about someone who gave up everything he owned and trekked out into the wilderness to survive on his own. That was the last time anyone saw him alive. It didn't take long for them to find his body.
Seriously, don't try it.

I take it then you are more a wood nymph than the other ... Well if that is your nature - then rejoice that others do not share your enthusiasm or otherwise it would no longer be a wilderness but someplace like Burbank. And you are right - Nature does provide everything the soul needs.

Because they don't want to. Living in the wilderness doesn't sound like fun and games unless you have others there to help out. Not to mention getting bored from lack of social interaction.

Unfortunately most wilderness left is protected and squatters are not welcome. As much as some of us would love that its just not possible. Every time we move to get away from people a new development pops up. The people who move there start complaining about farm noises and smells then new laws start showing up and self reliance is nearly impossible.

Uh..... because living on what you need sucks. I like my plush little existence. For example, who can really be said to need 3-ply toilet paper? And yet it feels so good.
In all seriousness, it's because we prefer comfort over discomfort. Some prefer the peace they can find through living like that to the comforts of modern life, but a lot of us can find that peace and live modernly at the same time. Also, sometimes it's just a qyestion of personal choice.

Well we get everything we use from the world around us. It just doesn't get created without our interference. We are natural though, I mean everything is. You go sleep under a tree and I'll make a house outta mine, it's all good to me. Just don't complain when it rains.
