I did this recipe for a bar cookie which I have done many times before, it usually comes out moist and crumbly, but this time it was dense and dry. I had to double the recipe to make two batches could this have caused the change?

Yes, it could. Might have been better off, making it twice. Some recipes just can't be doubled successfully. I found that out on my own, a few years ago. But it could also be, that you baked it too long. Some ovens bake hotter than they're supposed to. It's not the person's fault, it's just that way- old ovens bein the worst in that regard. My apt has such an oven. Try your recipe again, only make it twice. If the same result happens, try again, making it twice, but baking for less time.

Dont ever double recipes when baking. It always turns out wrong. Dont know why. You can make two batches at the same time, though. Just dont mix them together

You probably just baked it for too long. Just cut your time by 10-15 minutes and you should be fine.

Your cookies are dry because you either mix it too much or not enough liquid.
