Good question that requires a lot of thought.
I've worked it out on the physical side... my dream woman is taller. (5'9"ish)
Unfortunately I'm caught between liking dark hair/eyes and red heads with pasty white skin... But hey... its all good.
I'd go for someone with avg size breasts... I'm not too thrilled with mountainous breasts... I don't want them to get in the way of 'fun'. (Use you're imagination... there are lots of different fun things that huge breasts screw up.)
I'd like her to be fit... She doesn't have to be a health nut, but able to keep up with me would be nice. (Not that I'm Mr. Decathlon)
As far as personality this is the hardest part... I find so many people attractive for their uniqueness its really almost a bit 'sappy'.
I'd prefer a yin/yang of sorts of strengths and weaknesses... Ideally I would be good at what she isn't the best and vice verse. So we would compliment each other and help each other through the ruff spots.
This would require that we both understand one another, and realize that we're in it together, and understand and know our motives (even when we're not being our best) are pure.
I personally have a bit of a raunchy sense of humor... I'm irreverent and some may find me obnoxious... I'd love to have the same in the other individual.
I do have it worked out to every minor detail of "perfect for me", but some might think I'm crazy. *gets shifty eyes*

My husband. Everyone wonders what is up and why he is so perfect. I can't help it if God blessed me with a great guy. Thank you Lord! He is sexy and sweet and always puts me 1st. He's an awesome dad and an incredible lover. He works all week and helps me when he's home. He loves to do things with the kids or me. He goes to church and serves God and makes me happy. What more could I ask for.
