It is usually pork, but can be either. Plus you can get chicken pepperoni, believe it or not. I've tried it and it's not bad. I guess that the spices are the most important part. Oh, the chicken one was made by Armour.

It's got both beef and pork in it. Plus whatever else the manufacturer feels like it. Apart from the base recipe most smallgoods have anything in them that they need to get rid of. Ever noticed red flecks in luncheon meats, or baloney I thin it's called in th US (not sure on that sorry) Well it's the skins of hotdog franks that are recycled into other smallgoods

It can be beef, pork, turkey, or soy.
Walmart sells a very good turkey one. And I think Whole Foods sells a soy one.
