I suppose they're hoping you'll see the innate reason in the Bible. I'm not saying that it's an outstanding strategy, but hey, everyone is welcome to make their own arguments. To them, you must understand, the Bible is a starting place for understanding reality.
As a Christian myself, I find the whole worldview to be quite consistent and viable, which is more than I can say for the worldview constructed by most Atheists that I've had the pleasure of talking with.

Why do athiests insist on quoting the bible when debating religion with Christians?
That would be like a lawyer using a Spiderman comic to debate legal issues. If you are discussing religion then you go to the source. The bible (or if discussing Islam then the Koran). It is silly to have a debate and not use appropriate reference material, religious or otherwise.

People will quote the Bible for an obvious reason. It is the textbook on God. The Bible may be misinterpreted at times, but it is still true. The fact that agnostics and atheists do not accept the Bible as true does not change what Bible believers think. Without using the Bible, one is left to their subjective opinions about God. And there is no absolute truth in anyone's subjective opinions.

Because the Bible is the word of God. Why should I have to debate with an atheist when I have God's word to do it for me. My word is flawed. God's is not.

They have no access to logic....so...they put the "cassette" due to lack of their own logic and words.
They consider the bible as an authority.....despite we can find hips of contradictions in it.
