I use my great-grandmother's recipe and she used to say that the secret to a great carrot cake is "not being cheap." Use the best quality and freshest ingredients you can find and afford. Use the brand name cream cheese and margarine for your frosting. Don't use flour, sugar or oil that has been in your cupboard since the fall of the Berlin wall. Also, my sister uses the baby carrots and soaks them for about 4 hours before she drains and shreds them. Soaking helps the carrots release all its sweetness.

Try using a honey cream cheese frosting. Put lots of carrots in your cake. I use my food processor to grate them and do not add nuts. Try using apricots along with the pineapple.
