We're midwesterners, looking for something different than meat and potatoes, but simple enough all 6 of us like (ages 7-34!)

get some chicken tenders marinate them over night in ranch dressing coat them in bread crumbs a little oil in the pan and fry (that's one of my hubbys fav's) also try making pasta and last time we made it I used green onion dip in it and a little margarine and it was so good.

Chicken with onions and mushrooms :

- 6 chicken breast (boned and skinned)
- olive oil
- butter
- 1 onion, chopped thinly
- 12 medium mushrooms, chopped
- fresh parsley, finely chopped
- 1 teaspoon lemon juice

Fry the chicken in the oil until browned. Put them aside.

In the same pan, add some butter, and when it's melted, add the onion. Stir and fry for 5 minutes (until the onion is browned). Add the mushrooms and parsley. Stir well, and add the lemon juice.

Stir well and cook for a further 2 minutes before adding the chicken breasts.

Serve it with basmati rice. (I put the onion and mushrooms sauce on the rice in each plate)

Or if you prefer pasta, here are 2 very easy pasta recipes I often do when friends come at my place.

Pasta with salmon :
Cut some smoked salmon in small pieces (I use one which is marinated with dill, it's very good).
Make a sauce with cream, pepper, the salmon (and some dill if you use regular smoked salmon)
Cook the pasta (I use tagliatelles for this recipe).
When it's cook, add the cream and salmon sauce to the pasta. Stir well and serve while it's warm.

Pasta with chicken :
Grill some chicken breast filets in a pan. Remove them from the pan and cut them in small pieces.
Put some cream in the pan. Add some mushrooms, salt, pepper. Let it boil while stirring, then add the chicken.
Cook the pasta.
When it's cook, add the chicken sauce to the pasta. Stir well and serve while it's warm.

And if you like mix between salt and sugar this recipe was a kind of accident the 1st time, but since then I cooked it many times, and everybody love it.

For 4 people:
4 chicken breast filets
4 tomatoes
1 onion
some salty almonds (about 70 grams I think, I use a small bag of almonds for the "aperitif")
some honey
cinnamon
pepper
(no salt, the almonds are very salty)
butter (not too much, about 25 grams)
olive oil

Put some olive oil in a casserole. When it's hot, put the onion sliced in small bits, the chicken breast filets and some pepper.

Remove the skin of the tomatoes, and cut them in small pieces.

When the onion and the chicken are golden, add the tomatoes and some butter.

Cover the casserole, and let it cook until the chicken is well cooked. The tomatoes must be in purée at that time.
(Stir from time to time so it won't burn)

Remove the chicken and put it on a plate.

Add the almonds (all but 10 you'll keep for the decoration).
Add some cinnamon.

Add the honey. I can't tell you how much you have to put in the casserole, it depends of what kind of honey you like. Try with one tablespoon full, stir well, ant taste it. Then decide if you want to put more or not. I usually put 2 tablespoon full of brown liquid honey.

Then, put back the chicken breast filets in the casserole and let them warm again during 5 minutes

Serve the chicken with the tomato sauce.
I usually serve some basmati rice with it.
You can use some almonds (the ones you didn't put in the sauce) to decorate to plates. You can put some on the rice for example.

Season 2 Lbs of chicken, any parts, with salt and pepper. Brown the chicken in a skillet, add 1 can mushroom soup, 1/2 can water, 2 Tbs Worchestershire Sauce, and simmer, covered for 20-25 minutes until chicken is done. Serve with noodles, potatoes, or rice.
For a different twist, sustitute 1/2 cup hoisin sauce, 1/4 cup water, and soy sauce for the soup, milk, and Worchestershire. Add 1/2 Tsp of dried ginger, a couple drops of sesame oil, and a little sugar, if it is not sweet enough, and you have an asian-style barbeque chicken.

Porcupine Balls

1 lb ground sirloin
1/3 cup raw Colusa rice
1 green bell pepper, cut into thin strips
Salt & Pepper
1 can Campbells Tomato Soup

* Place ground sirloin in a medium mixing bowl
* Add salt and pepper and mix well
* Form into 1 1/2 inch balls and roll in raw rice
* Into a large saucepan, place soup and 1 can of water
* Gently place the beef balls into the soup, evenly spaced
* Pour in any remaining rice
* Add green pepper strips
* Cover and cook over medium heat turning balls once after about 20 minutes
* Cook about 35-45 minutes, until beef is thoroughly cooked and rice is soft

This is a very easy meal to make. For a large family I would use a
5lb package of hamburger and adjust the other ingredents.

The cool thing about Porcupine Balls is they can be used as an entree or a sidedish. You can freeze them after they are cooked they make for a great lunch with a salad.

I've always found soup to be the easiest to make for large groups. Dont have any recipes but chili, hunter's stew and chicken noodle are all good. On a more solid food note, one thing that is not too common, especially in the midwest (where I am also from but Ive traveled a bit) is gyros. They are very easy to make, in fact they are easier than tacos (since you don't have to brown hamburger - I hate that part of making tacos), but they have a unique taste that you can make as spicy or mild as you like.

You can get all this at most grocery stores, especially bigger ones like Walmart or Super Kmart or especially at health food stores if you have any around: pita bread, meat (can be beef roast, pork roast, chicken, roast lamb (for the truly authentic touch) or roast turkey), lettuce or fresh spinach (not the canned stuff), tomatos, sweet onions, green olives, and feta cheese (if you cant get feta, large curd cottage cheese that is drained of the milky stuff works well too). The secret ingredient to really top it off is the spices of course. The easy way is to find any greek seasoning mix (either dry shake on stuff or sauces). If you cant find that, use salad dressing made with olive oil and blends of spices. You can cube or chop up the meat and cook it in a wok or sauce pan until it is well done, adding the seasonings as you cook it. You can also use the pre-cooked roasts in the Hormel and Tyson packages they have now, but you still need to heat them in the microwave until they are very hot just in case they arent cooked fully. Be sure to drain off the juices so your gyros arent messy. Dice up all the veggies like you would for tacos. Heat the pita bread covered with a damp paper towel covering them in the microwave. Put the meat on first, then the feta cheese, then the veggies and finally the greek dressing. Then fold it up like a taco. They are kind of like the gorditas at Taco Bell if youve had those only they taste very different.

Gyros (pronounced "yee rohs") are a traditional Greek dish and are very easy to make. There arent many Greek restaurants in the midwest outside of college towns so these will be a real treat for your family.

this is a recipe my dad came up with. we had 7 total in our family and it served all of us! be careful of the cayenne pepper with kids. it can become very spicey!

Fat Boy's Shrimp Creole Recipe

½ cup butter

½ cup flour

2 cups chopped onion

1 cup chopped green pepper

1 cup chopped celery

Salt

Cayenne pepper

2-large cans, canned whole tomatoes

2-T Thyme

¼ cup, Worcestershire Sauce

2 lbs. peeled shrimp



Begin by making a roux of equal parts butter and flour. If you use one stick (which equals 1/2 cup) then use 1/2 cup of flour. Cook this over medium heat and stir constantly until it becomes the color of peanut butter, about fifteen or twenty minutes.



Sauté onions, green peppers and celery and season to taste with salt and cayenne pepper. Be frugal with the cayenne because it doesn’t take much to give it the bite you want. Cook until soft, about ten minutes, in the roux. Add the canned whole tomatoes after you break them up with your hand. Add the thyme and Worcestershire sauce and cover. Simmer for about 30 minutes. Season to taste and then turn off the creole. Add the peeled shrimp and it’s ready by the time you set the table. The shrimp will turn pink and curl into a u. This tells you that they’re done cooking.



Serve with steamed rice, French bread and butter and a fine white wine. Although not the healthiest of fats, I highly recommend using real butter in this dish. It makes a big difference in taste.

You might want to try meatballs and rice, simple to make and very filling. 3 lbs burger 1 egg and 3 cups of minute rice, if you really like rice you can add more 1 lg can tomato juice, cook in dutch oven on top of stove for about 45 min to 1 hr. med heat juice will thicken. you can serve with baked potato or just bread and butter.

One easy thing is spaghetti...I make it with a twist using a little meat and adding frozen peas to the sauce....surprisingly its good.
Another is tator tot casserole (layer tator tots, hamburger (browned and dranined) that has been warmed in a can of mushroom soup, steamed broccoli. Bake at 350 til hot through. About 10 minutes before it is done top with cheddar cheese (shredded).
Another is tuna fish casserole (I make it with tuna fish (canned), mushrroom soup, frozen peas, wide egg noodles..Bake at 350 and top off with cheddar cheese about 10 minutes before its dont.
One more for a side dish or easy lunch is green bean patties...mix a can or two of green beans (french style), an egg, couple slices of bread, salt, pepper, and diced onion. Fry in a skillet with little bit of butter til browned on both sides. Top with cheese slices and allow to melt. (The amounts can be varied to the number you are making it for)

make chicken spinach lasagna

like u do with reg lasagna but have
2 jars of Alfredo sauce
6 chicken breast baked or grilled then thinly slice
fresh spinach
mozzarella slices or shredded
start layering it like u would if u where doing reg lasagna but each layer has noddle sauce , chicken spinach cheese then noddles again bake for 35 to 40 min golden brown and let stand for 10 min and serve with what ever else u like

chicken spaghetti it goes a long way.
ingredients
six to eight pieces of chicken (legs and thighs)
spaghetti noodles 24oz
velveeta (small one or half of big one)
1 can cream of chicken (small can)
1 can cream of mustroom (small can)
1 can cream of celery(small can)
1 can of rotel

method
boil chicken on a large pot and when it is completely cooked remove chicken from broth. do not throw the broth away. place spaghetti in broth and cook noodles.while the noodles are cooking debone the chicken and put to the side when the noodles are completely cooked drain them and put them to the side. mix velveeta, creams of chicken,mushroom, and celery and rotel drained. when the velveeta starts to melt add chicken and noodles.

and you have yourself chicken spaghetti.
my kids love it
if it doesn't seem like enough you can double the recipe but still use just the one can of rotel.
