If guy is really shy and not that much outgoing, but has many friends who are girls, could he say, "I like you," because he likes a girl as a friend? Do guys say "I like you" often?
And when they hold out their hands, what does it mean? Does it mean they want to hold hands?

Guys don't usually say "I like you" to girls unless they like them like them because it could be taken the wrong way. Especially shy guys. They might say instead "I appreciate your friendship", which is unlikely to be interpreted as love.
I have no idea about the holding-out-hands thing, I don't remember doing that, but I guess he wants to hold hands.

In personal experince guys usally dont say "I like you" to often but he might be saying I like you in a sence of I like you as a friend so play it wise in what you do. Also in personal experince when a guy has held his hands out he has wanted to hold hands, dont forget play it wise.

If he says "I like u".....doesn't necessarily mean anything more than just that...he likes u....if a guy holds out his hand, he obviously wants to hold hands w/ u......go for it, feel out the situation.......see where it can go!!

guys always have trouble saying the ord "love", to someone they are new with. so if your man says "i like you". then it may be something more than nothing. if he sais something like: "i like that about you", then i don't know. could mean anything.
