That wacky Alton Brown always measures by weight, and I don't have any scales to measure stuff that way. If it makes more sense to use tablespoons or whatnot, that'd be fine too.

Are you sure it's weight and not size? There are 8 ounces in a cup, and 16 ounces in a pound, but they are different ounces. One is volume (cup) one is weight (pound). 2 cups does not necessarily mean a pound. 2 cups of molasses will certainly weigh more than 2 cups of water.

Find out what they mean (volume or weight) - it may mean just over a cup. : )

9 oz. weight of sugar is 1 & 1/8 cups, or 1 cup and 2 Tbsp.


Usually Alton gives volume conversions in his recipes... hmmm.... maybe he forgot one!
