My gf loves smokes salmon and I would like to make her some. I would like to give her a special evening.

Salmon dip, ball


3 Hard-boiled eggs, mashed
1 c Smoked salmon, flaked
1 ts Vinegar
2 tb Mayonnaise
3 tb Pimiento, chopped
salt and pepper


Mix all ingredients until well blended and chill.

Serve with your favorite fresh vegetables, chips or crackers.

OK this will take some time but its a recipe to remember
first you need a nice salmon fillet
in a large bowl combine
4 cups watter
2 cups real maple syrup
and enough salt to float a small potato
soak salmon in this brine for 24hrs
smoke over heat 2hrs or till fish is thoroughly cooked
top with lemon dill sauce
1pt heavy cream
1/4 cup lemon juice
1 1/2 tsp dill weed
cook over med heat till steaming
thicken with cornstarch and cold watter
garnish with fresh parsley
to accompany baked potato or a rice pilaf work nice and a green salad
and a chilled chardoney will top this of divinely
don't forget the candles

I found a site that has a lot of great recipes for smoked salmon. You can also order smoked salmon from the site and it will be delivered to your house, pretty cool.

Linguini with Smoked Salmon and Sun Dried Tomatoes

Serves 4

Ingredients:

1 1/2 cups cooked linguini
2 oz. butter
2 teaspoons capers
2 oz sun dried tomatoes
4 oz smoked salmon
4 tablespoons smoked gouda shredded
Alfredo sauce (see below)

Alfredo Sauce:

1-2 minced cloves of garlic
1-2 teaspoons butter (unsalted is best)
1 1/2 Cups whipping Cream (Can substitute half-n-half or milk for lighter sauce)
2 Tablespoons cornstarch
1/2 - 3/4 cup Grated Romano Cheese or Parmesan
1/4 teaspoon salt
1/4 teaspoon white pepper
Freshly Ground Black Pepper

Preparation:

Alfredo Sauce:

In a medium saucepan, sauté garlic in butter. Mix 1/4 tablespoons of the cream into the cornstarch and stir until smooth.

Add whipping cream and cornstarch milk mixture to pan, simmer until thickened, on low heat.

Add the salt, pepper and cheese stir until cheese is melted and smooth

Smoked Salmon and Sun Dried Tomatoes:

Melt butter in sauté pan, add capers, sun-dried tomatoes and smoked salmon. Sauté till hot.

Add smoked Gouda toss to coat. Mix Alfredo sauce in thoroughly and toss with linguini.

First of all - you are sweet for doing something like that for your girl.

Get a huge piece of foil and add a pat of butter. Then put the salmon. Add real lemon juice and black season pepper. Fold the foil to make a "pouch". Make sure its clothes on all sides. Place on BBQ Grill. Cook for about 40 minutes rotating (not over) every 10 minutes. Its Delicious!

If you want an appetizer try this. It's my variation on bagels and lox.

Toast a split bagel. Spread with cream cheese. Add sliced smoked salmon. Then chop some green olives (the kind for martini's) and top with that.

I love salmon cooked simply, so i can enjoy the flavour of the fish. Don't overdo it with lots of different flavours.

I like to grill the salmon fillets, then serve with a dallop of sour cream topped with capers, and a small wedge of lemon. yum!

maybe cook some aparagus with balsamic vinegar dressing as a side??

In case you are interested in breakfast or brunch ideas for her as well... I love, love, love smoked salmon (lox) and cream cheese on a toasted sesame bagle. Put a couple thin slices of tomato on there and you've got a winner.

Bourbon Marinated Smoked Salmon

1-1/2 pounds fresh salmon, skinned and boned
vegetable oil
1 cup bourbon
1 cup soy sauce
2 2/3 tablespoons fresh ginger
2 2/3 tablespoons black pepper
1/2 teaspoon chili powder
1-1/2 teaspoons garlic, minced
3/4 ounce sesame oil

Place salmon in large shallow dish; cover with vegetable oil. Mix all other ingredients together to make marinade; marinate 6 hours or overnight. Grill over mesquite until flaky.

Smoked Salmon Deluxe

1/3 cup Sugar
1/4 cup Non-iodized salt
2 cup Soy sauce
1 cup Water
1/2 teaspoon Onion powder
1/2 teaspoon Garlic powder
1/2 teaspoon Pepper
1/2 teaspoon Tabasco sauce
1 cup Dry white wine

Mix thoroughly. Brine salmon chunks 8 or more hours, keeping refrigerated. Rinse thoroughly after brining. Pat dry with a paper towel and allow to air dry for at least one hour prior to smoking.

Skillet Smoked Salmon

2 tablespoon Soy sauce
2 tablespoon Granulated sugar
1 teaspoon Szechuan peppercorns, coarsely crushed
2 Salmon fillets (about 8 oz each), skinned if desired
1/2 cup Loose black tea leaves, such as Lapsang Souchong
10 Whole star anise
2 Cinnamon sticks, broken in half
4 Thin strips of orange peel
1/4 cup Brown sugar

Combine soy sauce, granulated sugar, and peppercorns in a mixing bowl. Add salmon, coat well and marinate for 15 minutes. Meanwhile, line a cast-iron skillet or wok with foil. Add tea leaves, star anise, cinnamon sticks, orange peel, and brown sugar and toss together. Heat over medium-high heat until sugar bubbles and ingredients begin to smoke, about 5 minutes. Reduce heat to medium; place a rack in skillet. Remove salmon from marinade and place fish on rack skin side down. Cover with a tight-fitting lid; allow to smoke for 8 to 10 minutes. Turn off heat and let stand, covered, for 5 more minutes. Serve hot or cold.

Smoked Salmon and Cucumber Tramezzini

1 tablespoon Lemon juice
2-1/2 tablespoon Olive oil
Pinch salt
Freshly ground black pepper, To taste
8 Thin slices good quality Italian bread
6 oz Thinly sliced smoked salmon Or lox
1/2 Cucumber, peeled and thinly Sliced
1 c Watercress or basil leaves, Or mixed baby lettuces

Whisk together the lemon juice, olive oil, salt and several grindings black pepper.

Lay out 4 slices of the bread and brush lightly with some of the dressing. Top with the smoked salmon, cucumber and greens. Drizzle with the remaining dressing and cover with the remaining slices bread. Press down lightly and cut into halves.

Smoked Salmon Log

16 Ounces red salmon
1 Tablespoon minced onion
2 Cloves garlic, minced
3 Tablespoons parsley
8 Ounces cream cheese
1/8 Teaspoon liquid smoke OR Worcestershire sauce
1/2 Cup almonds, toasted and sliced

Combine salmon. cheese, onion, liquid smoke and garlic in bowl. Shape into a log. Mix sliced almonds and parsley. Roll log in mixture, then wrap in plastic wrap and refrigerate for at least 1 hour.
