Spaghetti with Zucchini and Garlic
2 small zucchini or 2 medium zucchini
1/4 cup extra-virgin olive oil
4 cloves garlic, chopped
salt & freshly ground black pepper
1 lb spaghetti, cooked al dente or to taste
1/2 cup grated parmigiano or romano cheese
salt and pepper
Pile up 2 or 3 layers of paper towels on a work surface.
Working on the paper towels, shred zucchinis using a grater holding the zucchini at an angle.
Heat a large skillet over moderate heat.
Add extra-virgin olive oil to the pan Add chopped garlic to the oil.
When garlic starts sizzling in oil, add shredded zucchini.
Season zucchini with salt and pepper.
Saute shredded zucchini 7 to 10 minutes.
Add hot, drained pasta to the pan.
Toss spaghetti with zucchini and garlic oil.
Add a couple of handfuls of grated cheese to the pan.
Adjust seasoning and serve.

2 chicken breast
2 zucchini
2 squash
1 can diced tomatoes
1 jalapeno chopped
1 medium onion
cube chicken and cook .Take chicken out and saute the onion and jalapeno in a little oil add salt, pepper, garlic powder to taste.Also add Cumin its a Mexican spice add about a teaspoon.Drain juice off of the tomatoes.add the tomatoes squash and zucchini.Cook on medium heat until all the veggies are tender.add the chicken last its a 30 minute meal i serve it with what ever i have on hand, corn bread,tortillas,rice, polenta.sometimes i add frozen corn right at the end.You could also add carrots too and take out the chicken and make it a side dish

My favorite way to eat zucchini:
Heat a frying pan over medium heat. Add olive oil. Grate zucchini with large-hole cheese grater (not the small holes). Mince fresh garlic, and add to frying pan. Sauté for a minute, then add the zucchini. Sauté until cooked. Serve on a plate with a lemon wedge. Squeeze lemon juice over zucchini. Sprinkle salt all over top. YUM!!

Zucinni Slice is yummy. all you need is eggs, cheese, onion and ummm not much more. You bake it for 30 min or so. Sorry I haven't got the recipe handy but just google it and I'm sure you will find a zillion ways to make it :)

cut zuchine into peices easly manage with a fork
add 1 8oz can choped tomato
1 med oinon diced
1# okra sliced into 1/4 inch peices
1 tsp choped garlic
a twist of lime
1/4 tsp cynne pepper (optional)
salt and pepper to taste
simple but delicious

Boil up your zuccini with some yellow squash, mix in a bowl with chopped green chilies, put in a baking dish and cover with shredded cheese, bake intil the cheese has melted.

so easy..............
tempura-make according to directions.
cut the zucinni into stcks
heat up some grease or oil in a frying pan.
dip the sticks into the tempura and add to pan
cook till golden brown.
you can use all kinds of vegies and seafood, chicken and pork.
mushrooms have to be canned not fresh.

** Zucchini with Parmesan **
8 medium zucchini
Good olive oil
2 large yellow onions cut in half and sliced 1/2 inch thick
Kosher salt
Freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Remove the ends of the zucchini and, if they are large, cut in half lengthwise. Slice the zucchini diagonally in 1/2-inch slices. Heat 2 tablespoons of olive oil in a large (12-inch) saute pan and add the onions. Cook for 10 minutes on medium-low heat, until they start to brown. Add half the zucchini, 1 teaspoon salt, and 1/4 teaspoon pepper to the pan and cook, tossing occasionally, for 10 to 15 minutes, until just cooked through. Sprinkle with Parmesan and cook for 30 seconds more. Remove to a serving platter and repeat with the rest of the zucchini. Serve immediately.
Note: If you cook too much zucchini in one pan, you end up steaming rather than sauteing it. I prefer to cook it in 2 batches.

** Italian Squash Pie **
1 (8 oz) can crescent rolls
2 tsp Dijon mustard
¼ cup butter or margarine ( I used EVOO)
1 ½ lb yellow squash (about 4 cups) thinly sliced (can also use combo of squahs & zucchini)
1 medium onion, thinly sliced
1 garlic clove, pressed
¼ cup fresh parsley
1 T chopped fresh basil or ½ tsp dried basil
2 tsp chopped fresh or ½ tsp dried oregano
2 tsp chopped fresh or ½ tsp dried thyme
½ tsp salt
½ tsp pepper
2 large eggs
¼ cup milk
2 cups ( 8 oz) shredded mozzarella cheese ( I used sharp cheddar)
Unroll crescent rolls; press dough on bottom and up sides of a 10 inch tart pan, pressing to seal perforation. ( I just used a casserole dish)
Bake at 375ºF for 6 min. or until lightly browned. Spread crust with mustard, set aside.
Melt butter in a large skillet over medium-high heat. Add squash, onion, and garlic; sauté 7 min or until tender. Remove from hear; stir in parsley, and next 5 ingredients.
Whisk together eggs and milk in a large bowl; stir in cheese and veg. mixture. Pour over crust. Bake at 375 for 20 to 25 min.

we like garlic so I make a garlic butter sauce and then cut the zuccinni up in what ever shame am in the mood for lol then place it on the grill it cooks up in no time at all.
