Cheese-Filled Mushrooms
1 1/2 pounds white mushrooms
1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
3/4 cup mayonnaise
Crumbled cooked bacon, to taste (optional)

Preheat oven to 375 degrees F. Lightly grease a large cookie sheet; set aside. (If desired, line cookie sheet with aluminum foil to save on cleanup.) Wash mushrooms thoroughly; dry and remove stems, hollowing out a hole where the stem was attached to the mushroom. Set aside. Mix together cheeses, mayonnaise and bacon (if using). Pack the center of each mushroom with a mound of the cheese mixture. Arrange mushrooms on cookie sheet. Bake until cheese is browned and mushrooms are shiny, about 20 minutes. Mushrooms may be stuffed and refrigerated ahead of time, then baked as needed.

Mushroom and Swiss burger
can Campbell's Golden Mushroom soup
can Green Giant sliced mushrooms
teaspoon Worcestershire sauce
slices processed swiss cheese (no holes)
4 1/4 lbs hamburger patties
1/2 teaspoon Accent seasoning
1/2 teaspoon Lawry's Seasoned Salt
1/4 teaspoon ground pepper

Mix the first three ingredients together, put on low heat and let simmer. Mix the Accent, Lawry's and pepper together and put in a shaker. Season the patties with this and fry or grill until done-dont press on the patties-you must resist this impulse! Put patty onto a bun, then the swiss, then the sauce and you're done.

Okay - as long as we are sharing, right? I hope you will post some of your fave recipes too!

I have a very simple recipe for sauteed mushrooms - I make it in a large batch, and freeze what I am not using. It is great for stuffing, omelets, or on its own.

2 Tablespoons butter/olive oil mix (Very good mix - best flavour of butter, low burn of olive oil!)
1 thinly sliced yellow onion
1 clove smashed, then chopped, clove of garlic
4 large portabello mushrooms, full sliced 1/4" thick, washed and stems removed (freeze them for soup)
8 ounces BABY spinach, washed (regular spinach can do okay, just halve the recipe)
1/4 cup campbells chicken broth (no cubes!!)
Salt
Fresh cracked black pepper
juice of 1/4 fresh lemon

Melt butter/olive oil mix in heavy frying pan over medium heat. Saute onions until opaque - limp but not browned.
Add crushed garlic, and saute for another 2 minutes
Add sliced mushrooms, stirring frequently, until lightly browned
Add spinach and Chicken broth on top of mushrooms - no need to stir - and cover immediately
Lower heat to medium low
Let simmer for 5 minutes - then stir and cover another 5 minutes
Remove cover
Add salt, cracked pepper, and lemon juice
Simmer on low for 4 minutes

In an omelet, put this mixture in the middle, fold your omelet and sprinkle with Spiced Gouda (aailable everywhere) or old cheddar.
Put lid on immediately and leave for at least 60 seconds.
Sprinkle with chopped parsley (Cilantro is better) and serve immediately with lightly fried red tomatoes sprinkled with lemon pepper - Amazing!

For a twist, add some fresh chopped asparagus when you add the onions.

That's it!

Good Luck!

Bacon-Wrapped Mushrooms With Honey-Barbecue Sauce:

Prep: 15 min., Cook: 4 min., Grill: 10 min.

24 small fresh mushrooms
12 bacon slices
1 cup Honey-Barbecue Sauce

Wash mushrooms thoroughly. Cut bacon slices in half crosswise, and microwave, in 2 batches, at HIGH 1 1/2 to 2 minutes or until bacon is partially cooked. Pat dry with paper towels. Wrap each mushroom with a bacon slice, and secure with wooden picks. Dip wrapped mushrooms in Honey-Barbecue Sauce.

Grill mushrooms (using a grill basket, if necessary), covered with grill lid, over medium-high heat (350° to 400°) 4 to 5 minutes on each side or until bacon is crisp and thoroughly cooked.

Yield: Makes 8 appetizer servings

A great filling for manacotti is finely chopped mushrooms-any type, sauteed to get moisture out. Add to ricotta cheese in the proportion you like. finely minced garlic sauteed with the mushrooms if you like. Take any recipe in a cookbook for exact measurements and add mushrooms to taste.

Buy big ones, then cut stems off. Stuff with raw Italian sausage, cover with spaghetti sauce and bake. Sprinkle with Mozzarella for last 5 minutes.
Lightly fry Portabella slices in herb butter, eat instead of a burger on a toasted roll with cheese.

Slice them up, cut up some onion and saute them in butter . . . eat them like that or serve them over baked potatos or steak or chicken. There's not a bad way to have mushrooms.

Cut the stems off, slice up the caps, finely chop up an onion. Saute them both in butter and enjoy.
