Tomato Paste Recipe
Another way to get rid of the massive tomato harvest!
48 large tomatoes
2 teaspoons salt
8 half pints

1. Peel, core and chop tomatoes.
2. Measure to 8 quarts.
3. Add salt.
4. Place in a large stainless or enamel pot and simmer for 1 hour.
5. Remove and put through a food mill.
6. Return to pot and continue to cook-around 2 hours-or until it holds it's shape-like tomato paste.
7. Spoon into clean hot jars leaving 1/4 inch head space.
8. Process in a boiling water bath for 30 minutes at altitudes up to 1000 feet.
9. Note-if your going to make quarter pints same process time please.

Tomato Paste

8 quarts peeled, cored, chopped tomatoes (about 4 dozen large)
1-1/2 cups chopped sweet red peppers (about 3)
2 bay leaves
1 tablespoon salt
1 clove garlic (optional)

Combine first four ingredients and cook slowly 1 hour. Press through a fine sieve; add garlic, if desired. Continue cooking slowly until thick enough to round up on a spoon, about 2-1/2 hours. Stir frequently to prevent sticking. Remove garlic and bay leaves. Pour, hot, into hot half-pint jars, leaving 1 inch head space. Adjust caps. Process 45 minutes in boiling water bath.

The food mill solution is good. An alternative is to put it through a steam juicer. Save the liquid to use as tomato juice. Save the solids as tomato paste. You could freeze or can the result. Freezing is easier, but you need to have the freezer space.

Try Dee's recipe but strain it before you put into jars. It will be thick so you have to push it through a strainer. You need to add a little sugar also. About a teaspoon per 5# of tomatoes.
