"The origins of bridal bouquets stem from ancient myths surrounding some of these pungent plants, including garlic and chives, believed to protect the wedding party from bad luck, evil spirits and ill health.
The Romans later did what they “did best” They “Romanticized” this ancient ritual by adorning the bride and groom in floral garlands symbolizing new life and hope of fertility.
And the Greeks soon proved they were just as romantic. Together the Greeks and the Romans established the custom of scattering flowers before the couple to symbolize the essence of love."

Yes, the tradition started when there wasn't running water and people didn't bathe regularly. After a while people started to smell and disguise the smell, brides carried bouquets and put flowers in their hair etc. As usual, people have just taken that too far and the amount of money people spend on a bouquet these days is ridiculous. I was recently married and was appalled that I had to spend $140 for a small posy of roses to carry! But that's another story...hehe

This part is a little more gross, but I've been told it's accurate:
Centuries ago, hygiene wasn't anything like it is today. People took a bath only twice a year. (I'm sure they washed up in between, but that just isn't the same.) One of these baths was in the late spring, hence the reason we have the tradition of so many May / June weddings. Even so, the bride was likely to be a little, uh, "ripe" by her wedding day, so she would carry a fragrant bouquet to sweeten the scent.

I'm not sure if it is true, but this is what I heard:
Back in the old days, before they knew it was a good idea to bathe every day, women used to put flowers in their hair and hold a bouquet to perfume themselves.
It also gives your hands something to do and covers up your trembling from nervousness.

Long long ago, people only bathed yearly. So, brides would carry flowers to mask any body odor they might have had. This is also where June brides come in. People still smelled pretty good in June, so they would carry some flowers and get married in June while they could still hide any smell they might have.
