Try making Chicken Parmesan with pasta

Marinate chicken in Italian dressing.
than cook in oven for about 25 min
While waiting heat some tomato sauce in a sauce pan (season to taste, Italian seasoning, salt pepper, basil, parsley...
Once the chicken is done cover with sauce & thin slices of mozzarella chesse put it back in the oven for about 5-8 min.
Add some pasta and bon apetite!

Or boil it for about 45 min season well
When it's done Shred it with a fork and make tostadas or tacos or burritos or chicken sandwhiches, the list is endless.

Boil the chicken and cube it. Boil spaghetti noodles in the chicken broth. In a separate bowl, melt 1lb. of velveeta cheese with 1 can of Rotel diced tomatoes, and 1 can of cream of mushroom soup. After noodles are done, drain them and mix them with your cheese mixture and add the chicken to it. Put it in a 9x13 dish and add shredded cheese to the top. Put it in the oven on 400 degrees long enough to melt the cheese on top. It's called chicken spaghetti & it's delicious!!

Cube it, and put on skewers with pepper pieces and onions. Grill while basting with fat-free Italian dressing for super healthy shish-kabobs. I could eat these every week!

How do you normally eat it? I don't know what I can suggest. Maybe a nice stir-fry w/ different veggies using cooking spray in stead of oil?

Here are some.
Grilled Lemon Thyme Chicken Breasts
Grilled chicken breasts are extra-special with a lemon and thyme twist.

4 teaspoons chopped fresh thyme leaves
1 tablespoon freshly grated lemon peel
2 teaspoons garlic salt
1/2 teaspoon pepper
4 boneless skinless chicken breasts (about 1 1/4 pounds)

1 . If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Spray grill rack with cooking spray. Heat coals or gas grill for indirect heat.
2 . In small bowl, mix all ingredients except chicken. Sprinkle mixture over chicken.
3 . Cover and grill chicken over drip pan or over unheated side of gas grill and 4 to 6 inches from medium-high heat 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).

Grilled Ham- and Swiss-Stuffed Chicken Breasts
Grill a favorite combo, ham and cheese rolled up inside another favorite--chicken breasts!

4 boneless skinless chicken breast halves (1 1/4 pounds)
4 slices (1/2 ounce each) Swiss cheese, 3x1 1/2 inches
4 slices (1/2 ounce each) cooked ham, 3x1 1/2 inches
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
1/2 cup honey mustard dressing

1 . Heat coals or gas grill for direct heat. Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper.
2 . Place cheese slice and ham slice on center of each chicken breast; roll up. Secure with small metal skewers. Sprinkle with seasoned salt and pepper.
3 . Reserve 1/4 cup of the dressing. Cover and grill chicken rolls 4 to 6 inches from medium heat 15 to 20 minutes, brushing with remaining 1/4 cup dressing during last 10 minutes of grilling, until juice of chicken is no longer pink in center. Serve chicken rolls with reserved dressing.

Chicken Breasts with Orange Glaze
Wake up the flavor of bland chicken breast with an easy orange glaze made from orange marmalade, mustard, orange juice and soy sauce. It’s citrus delicious!

1 tablespoon butter or margarine
4 boneless skinless chicken breast halves (1 1/4 pounds)
1 teaspoon cornstarch
1/2 teaspoon ground mustard
1/2 cup orange juice
1/4 cup orange marmalade
2 tablespoons soy sauce

1 . Melt butter in 8-inch skillet or 3-quart saucepan over medium heat. Cook chicken in butter about 15 minutes, turning once, until juice of chicken is no longer pink when center of thickest piece is cut.
2 . While chicken is cooking, mix cornstarch and mustard in small bowl. Stir in remaining ingredients.
3 . Place chicken on serving plate; cover to keep warm. Discard any juices left in the skillet.
4 . To make the glaze, pour orange mixture into skillet. Heat to boiling over medium heat, stirring constantly. Boil about 1 minute, stirring constantly, until glaze is thickened. Pour over chicken.

Good luck!
