It has to be smoked. I couldn't believe the flavor the first time we cooked it this way. Of course using a really good homemade dry rub on it first is the key. I'll never go back to any other method. I'm definitely spoiled.

Make a rub with garlic, salt, pepper and infuse it with just a little smoke flavoring (you just want enough of the smoke for flavor not to make it damp, just pour it into the spices and rub it around in the bowl with your hand till it is all infused in the spices) coat the top (fat side up, don't remove the fat before cooking it adds flavor and moisture) put it on a rack in a baking pan and put a little water in the bottom of the pan.cover it with parchment paper and then foil ( to keep the foil from corroding onto the meat from the salt) put it in a low oven about 250 or 275 bake it over night and take it from the oven and peel off the fat, shred the meat and mix it with BBQ sauce and place it back in a rectangle baking pan to reheat it if necessary

slow cook it -

add all your favorite seasonings, some garlic, onions, chopped potatoes and carrots. add about 1 cup water. cook it for about 5 hours in a slow cooker or crock pot.
you can do the same thing in the oven, but cover it with foil and turn the temp down to about 300 or so.

I did this for the first time the other night. Okay, I put a peppercorn rub on it, worcheshire sauce, paprika and salt and pepper. I put it in a roasting pan and heated the oven to 350 deg. I baked it for over three hours and my husband loved it.

In a crock pot for 5-6 hours. Be careful with salt products until you have had a chance to taste test it. Some are saltier than others.
