It has something to do with the fact that salmon starts off as freshwater fish, goes out to the ocean, becomes a salt water fish, goes back into freshwater to spawn - then dies in the fresh water (unless caught). Barry Sears, Ph.D., in his book "Entering the Zone" described how this cycle somehow contributes to the creation of more omega-3s in salmon than in tuna, mackerel, cod, or other fish that are high in omega-3s.
