I think I saw Greenland from my seat when I came from Italy.

Frequently they do. There are four routes across the northern ocean, and two of them are near Greenland. Its called the great circle and is the shortest distance across the face of a sphere. Aircraft with only 2 engines that are crossing the ocean are required to be a certain distance from land should one engine fail.

When flying to the east coast they usually just fly straight across the ocean, no where near Greenland. When flying to central or west coast, yes they take a more northerly route over Greenland, not in case of an emergency, just because that's the shortest route.
