Symantec Ghost. Hook up the new drive along with the old and ghost from the old to the new. It will copy the entire drive over to the new one in just minutes. Then you can replace the old drive with the new one and boot up from it like usual.

A simple approach is to leave the small drive in the machine and use that just for system files. Install your larger drive as your data/application drive. This is pretty foolproof and easy to do.

Once the new drive is installed, move your documents etc to the new drive, and also re-install applications that you want to have on the larger drive. Unfortunately, for most applications, you can't just copy them over from one drive to the other.

There are some applications around too that can move applications, but for most people, it isn't worth the extra cost.
