This lady is retiring from work here and they are having a potluck for her. What do I bring? Something simple I am low on money.

If you're truly broke, volunteer to bring the sodas or napkins before anyone else can!

Desserts are easy and make a lot of people happy without a lot of work and money, too.

Chili in a crockpot can be good, but get expensive and/or messy.

Guacamole Dip> 2 very ripe avocados, a little lime or lemon juice (Realemon works), diced onion (about 1/2 of a medium one), 1 tbsp. cilantro (snipped), 1 clove garlic minced, *1 tomatoe, peeled, seeded, finely chopped, l1 sm. can diced chile peppers *(or can buy the diced tomatoes w/ the chile (jalapeno) peppers and other spices already in there).
In blender or food processor combine everything EXCEPT the tomatoe, blend well until mixture is smooth, scrape the sides if necessary. Stir in tomato.(if using the canned type, drain some of the juice first). Salt to taste (about 1/4 tsp.)
Transfer to serving bowl. Cover & chill for up to 24 hrs. - Add couple bags of tortilla chips or the "scoops" kind. Viola!!! Cheap & very tasty...I bet there won't be any left-overs!!!!

Here is a simple dessert: buy a box of brownie mix w/ walnuts and bake in a round cake pan according to package directions. When done, remove from pan and cool on plate or rack. While it's cooling, melt a cup of semi-sweet chocolate chips with a stick of butter in microwave. Spread on your cake. And add a teaspoon of vanilla extract to your batter before baking. It's called brownie-walnut torte--very rich, easy, and cheap. Use the kind w/o nuts if you prefer.

Brownies. Use brownie mix. It's cheaper than cookies or cake to make and as long as you can follow the recipe, they'll be a hit.

Bruschetta!
Diced tomatos, parsley, minced garlic, onion, and olive oil. serve with sliced/toasted italian bread. Totoally easy and looks gourmet.
What ever you decide on, remember, its all about presentation.
