Spaghetti Casserole:
1 pound hamburger, fried and drained
1 jar spaghetti sauce
1 ring bologna, diced
1 handful spaghetti noodles, cooked and drained
pepperoni
your favorite shredded cheese

Mix the first 4 items together and put half in a 9x13. Top with pepperoni and shredded cheese. Add the other half of the mixture. Again top with pepperoni and cheese. Bake at 350 for 30 minutes.

This is a great way to use up left over spaghetti. It also freezes well for use later.

Green bean casserole


2 cans of green beans drained
2 large cans of fried onions
2 cans of cream of mushroom soup
1 can of milk*
1 tsp of adobo
1 tsp of lemon pepper
1 tsp of onion powder
1 tsp of garlic powder
Salt and pepper to taste


Place drained green beans into a medium sized mixing bowl and add seasonings. Stir well. In a saucepan bring together the 2 cans of soup and the 1 can of milk. Wisk until soup is completely dissolved. Let soup cool. Add cooled soup to green beans and mix to thoroughly coat the beans. Add 1 can of fried onions and mix well. Pour into a casserole dish and place into a 350-degree oven for 40 minutes. When the 40 minutes is up, spread the second can of fried onions onto the top of the casserole and bake for an additional 5 minutes or until onions are golden brown. Let stand for at least 5 minutes away from heat to let soup set.


Note: use one of the empty soup cans to measure appropriate amount of milk.

1 can solid tuna in water
1 small (6 oz) can sweet peas

Boil macaroni according to package directions. Drain tuna and peas while the noodles cook. Combine the soup with 1 tbsp butter or magarine and 1 tbsp milk, plus cheese sauce powder. Stir all ingredients together. (You can season at this time with garlic powder, onion powder, etc. to taste.)

1 can Cream of Mushroom Soup
1 10 oz pkg frozen chopped broccoli (thawed and well drained)
1/2 cup chopped onion
1/2 cup chopped celery (optional)
1/2 stick of butter or margarine
About 1 soup can of Minute Rice (uncooked)

Sautee onions and celery in melted butter in a large skillet. Stir in cheese, cream of mushroom soup and broccoli until blended together. Add rice and mix well. Transfer to 9 x 13 greased baking dish and bake at 350° for 30-45 minutes until cheese browns.

2 cans of tuna ( any kind) well drained
2 cans of cream of mushroom soup
half a bag of crunched up ruffles potato chips
put into pot on medium heat and stir occasionally
folding the chips into the tuna and soup
add 2/3 cup of milk, continue to stir, add

Pierogy Casserole

12 frozen pierogies (potato or potato and cheese)
1 (28 oz.) can crushed tomatoes
2 lg. onions, thinly sliced
8 oz. pkg. mushrooms, sliced
1 T. vegetable oil
1 T. chopped fresh parsley
1 clove garlic, minced
1/4 tsp. pepper (or dried red pepper)

Preheat oven to 350F. Prepare pierogies according to package directions for boiled pierogies, drain. In 12-inch skillet, sauté onions, mushrooms and garlic in oil until soft and golden. Add crushed tomatoes, parsley, pepper and 1/2 cup water. Heat to boiling. Cook 5 minutes.

Arrange pierogies and tomato mixture in shallow baking dish. Cover and bake 30 minutes. Sprinkle with Parmesan cheese, if desired. Serves 4.
