Cornbread Mexicana
Ingredients:
1 1/2 cups flour
2 1/2 cups cornmeal
5 teaspoons baking powder
1 1/2 teaspoons salt
4 tablespoons sugar
1 tablespoon cumin
1 teaspoon chili powder
1 can whole kernel corn (15 ounce), drained
1 can green chiles (4.5 ounce), diced
2 eggs, beaten
2 cups milk
1 stick butter, melted, (1/2 cup)
1 cup grated cheddar cheese
Preparation:
Preheat your oven to 425°F.
Add all of the dry ingredients to a large mixing bowl and incorporate. Add drained corn and green chilies. Add eggs, milk, melted butter, and cheddar cheese.
Mix well. Pour into a 13 X 9 pan (1/4 sheet), or muffin pans that have been sprayed with cooking spray. Bake for 20 minutes or until golden brown. Freezes well.

Mexican Cornbread:
3 cups self-rising cornmeal mix

6 pickled jalapeno peppers, diced, with a little juice
1 large diced onion
1 (15 ounce) can creamed corn
1 1/2 cups shredded cheddar cheese
1 cup oil
16 servings 2 pones Change size or US/metric
Change to: pones US Metric
50 minutes 20 mins prep
1. Set oven 425F degrees.
2. Put 3 tablespoons each of Crisco into 2 iron skillets.
3. Place them into the oven as it is pre-heating.
4. Mix all ingredients together and divide batter equally between HOT skillets.
5. Bake for 30 minutes or until brown.
6. Remove from pans to cool.
7. Note: I have made this recipe using only 1/2 cup oil and it turns out just fine.

I like to just use a box of Jiffy cornbread mix (it's only about sixty cents a box!) and make it according to the directions, adding one minced, chopped fresh jalepeno, about 1/2 cup cooked corn, and a pinch of ground cayanne pepper. You can adjust the cayanne and the amount of jalepeno depending on how spicy you like things.
It's super easy and fast, and it tastes soooo good with chili!
