I have been preparing my own and eating raw salmon (sashimi). Do i have to freeze it before eating it to kill off any bateria/viruses/parasites?

Freezing does not kill bacteria. Sperm and eggs live through eat every day.

You have to buy sushi quality salmon/tuna at a fish market,unfrozen. IT SHOULD NOT SMELL LIKE ANYTHING. If it smells fishy, save it for the grill or toss it. Keep it one ice, from the time you pay for it, until the time you serve it.

Only slacker sushi chefs freeze the fish before. If you are going to do it, do it right and buy it super fresh. You will pay for it at a premium, but it's worth it

Yes freezing is required by law in the sushi industry in America. In Japan, Tsukiji Market has machines which flash freeze fish in 5 minutes. It's like -30 degrees below zero. This kills parasites in anything. If your fish is only a day old from the water, it should be okay to freeze over night. Also you should consider the source. Is it wild Alaskan salmon? Or the farmed Canadian stuff? Or Chile stuff?

The freezing of the fish has nothing to do with bacteria. The fish is normally frozen or semi-frozen - especially for the sashimi cuts - so you can do finer slices since you harden the texture.

Freezing doesnt kill bacteria, but it can kill live parasites, such as some nematodes. Although freezing to a -20°C for at least 7 days is required.

freezing wont kill off any bacteria, it just stops the ones that are there from growing. once you thaw the fish the bacteria go back to work.

the best way to keep from getting sick is to use the freshest fish you can get. If you must use frozen fish, thaw it slowly under cold running water the same day you will eat it.
