Does anyone have any good pasta recipies? My family is picky (and has allergies) and wont/cant eat zuccini (sp?), alfredo sauce, sausage, or mushrooms. I am looking for any good recipies for pasta, it's sauce, and or meatballs... I apreciate the help.

•1 pound ground beef
•Salt and freshly ground pepper (to taste)
•1 large onion, finely chopped
•1 medium red bell pepper, finely chopped
•1 medium yellow bell pepper, finely chopped
•1 medium orange bell pepper, finely chopped
•4 – 5 garlic cloves, finely chopped
•¼ cup finely chopped parsley
•¼ cup finely chopped oregano
•1cup bread crumbs
•1 – 2 large eggs
•¼ cup parmesan cheese
•1 medium dollop of Dijon mustard
•3 tablespoons soy sauce or teriyaki sauce
•Oil and butter for frying
•Flour to aid in rolling mixture into balls
In large bowl combine all ingredients, beginning by just adding one egg. Mixture should be soft but not gooey. If mixture is dry and will not stick together, add the second egg. Using a light sprinkling of flour to coat your hands and work surface, roll balls between palm and counter to form mixture into balls the approximate size of large eggs. Heat large pan over medium high heat with approximately 4 tablespoons of oil and add 1 ½ tablespoons of butter. Heat until oil sizzles when a bit of flour is sprinkled into the pan. Add meatballs to pan, being careful not to add too many and not to let the meatballs touch each other. Fry on all sides of the ball to achieve a crispy, brown, crunchy exterior, approximately 3 – 4 minutes each turn. If oil runs low, add more oil and butter in small increments. Transfer the meatballs to a warm paper towel lined plate to absorb some of the grease, and keep warm over very low heat in oven until the rest of the meatballs are finished. Serve alone with a side salad and vegetable or serve over the top of fresh cooked spaghetti and sauce.

1 lb angel hair pasta; cooked
1 drained -- hot
1/3 c fresh cilantro -- chopped

Instructions
Combine beef, bread crumbs, 1/4 cup picante sauce, onion, parsley, egg,
salt and 1/2 tsp cumin; mix well. Shape into 1" balls. Place meatballs on
15x10" jelly-roll pan. Bake at 350~ for 15 minutes. Drain off fat. Combine
tomato sauce, remaining 1/2 cup picante sauce, velvetta, chili powder,
remaining cumin and coriander in a large saucepan. Cook over low heat,
stirring frequently until cheese is melted. Add meatballs; simmer until
heated through. Spoon over pasta; sprinkle with cilantro, if desired. Serve
with additional picante sauce.

Creamy Parmesan Pasta with Turkey Meatballs:
Turkey meatballs:
1/2 pound ground turkey breast
3/4 cup finely chopped onion
3/4 cup fresh breadcrumbs
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/8 teaspoon black pepper
2 garlic cloves, crushed
1 large egg white
Cooking spray
Remaining ingredients:
1/2 cup dry white wine
1/2 cup chopped green onions
1/2 cup whipping cream
1/4 cup (1 ounce) grated fresh Parmesan cheese
2 tablespoons water
5 cups hot cooked fettuccine (about 10 ounces uncooked pasta)
To prepare meatballs, combine first 8 ingredients in a bowl. Shape turkey mixture into 20 balls. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add meatballs; browning on all sides. Remove meatballs from pan.
Add wine and green onions to pan, scraping pan to loosen browned bits; cook 2 minutes. Add whipping cream, cheese, and water; reduce heat to medium, and cook 3 minutes, stirring frequently. Add pasta, and cook 1 minute, tossing to coat. Place pasta on each of 4 plates, and top with meatballs.
Yield: 4 servings (serving size: 1 1/4 cups pasta and 5 meatballs)

I usually make meat sauce. i cook the mince meat for a few mins uncovered. then in a separate large sauce pan, i fry some chopped onion and garlic in olive oil. then add my ingredients like diced sweet peppers, mushrooms (in your case, u dont need to put this), some chicken broth, fresh tomatoes or crushed canned tomatoes, the cooked mince meat, fresh basil, oregano, chopped chives, italian seasonings, let simmer and cook for a while on slow heat and cover. halfway thru, add a can of tomato sauce or bottle of spaghetti sauce (i prefer the spaghetti sauce). simmer again for about half more hour. taste and add seasoning/salt to taste. remove from heat.

Try these sepretly, not together:
1.Sauce boiling slowly with a stick of cinommon
2. add tuna or any fish to pasta
3. add an egg and let it cook on top of the slowly boiling sauce
