It's pretty versatile...but you have to watch because it has a high moisture content and gets soggy really easily.
Best bet if you are going to use it as just a plain side dish is to remove the ends, halve it lengthwise, then slice it crosswise about 1/4 inch thick slices.
Use a large skillet because of the increased surface area (cuts down on the chances that it will get soggy).
Heat 3T of olive oil in the skillet, add a small chopped onion if you have one, if not it's cool. Cook onion about 3 minutes.
Add the zucchini slices. Cook about 8 minutes until they get spotty brown and tender.
You can drop in some minced garlic, too and cook for about 15 seconds. The garlic and onion combo really help.
Fresh parsley, salt, pepper top it off nice.
You can serve green beans with it as a second side, but I'd steam the beans and add a pat of butter and some salt rather than cook them with the zucchini.

Slice the zucchini. Slice some onions. Put some olive oil in the pan and than add the onions. Saltaie the onions until yellow and you smell the aroma. Add the zucchini and continue to saltae the onions with the zucchini. When zucchini is soft add some salt, garlic powder and black pepper.
Continue to cook zucchini until ready.

My kids like them fried. Cut in 1/2 inch sticks 1 1/2 inches long. Season with salt. This will help them sweat water. dip them in flour then egg wash. I usually put some parmesan cheese and fresh chopped parsley in the eggs. Them dipp them in bread crumbs. They can be refrigerated or cook right way. Do not let sit overnight they will be soggy and more dificult to fry. Heat some oil in a pan or deep fryer. Oil shoul be hot. 375 degrees. Drop in some zucchini a few at a time and when they are cooked they will swim to the top of the oil. Remove with slotted spoon. They can be dipped in cockail sauce or russian dressing

Try this recipe:
2 medium sized onions
1 medium sized tomato
2 cloves of garlic (optional)
10 g of ginger (1 small piece, optional)
1 tbsp of cooking oil
1 Zucchini
Salt and red or white pepper to taste
Method:
Heat oil in pan
Slice onions and toss them in oil in medium heat
Add chopped ginger and garlic
When they are brown, add chopped tomatoes
Toss them till tomatoes are cooked
Add round slices (around 2- 3 mm) of zucchini and toss.
Add salt and pepper.
Cover the pad with lid and let it cood on low heat.
Toss after 10 minutes and let it simmer again for 10 minutes on low heat.
Switch off when zucchini is tender. Generally, it takes 20-25 minutes for it to cook on low heat.
Server hot with pita bread.

I slice it in rounds and flour it lightly with whatever seasonings you like (garlic, season salt, etc) then fry it in oil... remove when lightly browned and salt.
Also i like to make zucchini bread with it... kind of like banana bread. It comes out very moist and doesn't taste like zucchini... a good way to "hide" veggies from kids. I don't have the recipe right now.. but you could find it online I'm sure.

Slice thinly, saute with a small amount of butter for about 15 mins. If you are adventurous, do the same thing with an onion first and then add the zucchini.

There are lots of ways to cook zucchini and squash. My favorite is to grill them with some onion & pepper. First, cut off the ends and peal. You can slice long ways or just circular slices. Slicing long ways makes them a little easier to manage on the grill. After slicing, brush with olive oil and then salt (it seems to take a lot in my opinion), pepper, garlic powder, etc (whatever you like). We have a spice brand called Chef Paul....they have pre-mixed spices....beef spice, chicken spice, veggie spice....the veggie is great sprinkled on your grilled veggies.
