I was given a recipe for spanish rice that said to brown the rice in olive oil, then add onions and garlic. In another pot you are supposed to combine chicken stock, tomato paste, oregano and salt. I tried to make this three different times, and even though it looked right, the rice itself was crunchy (I did try making it without browning the rice too) This is not the first time I have tried to make the rice, but everytime I do, it turns out yucky... I need help.

Spanish Rice
Ingredients:
2 tablespoons butter
2 tablespoons yellow onions, chopped
1 cup rice, white, long grain
1/2 cup tomato juice
1 cup water
2 chicken bouillon cubes
3 dashes bottled hot pepper sauce
2 teaspoons chili powder
1 pinch black pepper
1 Roma tomato, chopped
2 tablespoons red bell peppers, chopped
2 tablespoons green bell peppers, chopped
Preparation:
In a saucepan that has a tight fitting cover, melt the butter and sauté the onions until soft. Add the rice and stir to coat the rice with butter, then add the tomato juice, water, bouillon cubes, pepper sauce, chili powder, and black pepper.
Stir to dissolve the bouillon cubes and bring to a boil. Once the liquid reaches a boil, reduce heat to its lowest setting, cover, and go away for 25 minutes.
Do not stir, do not look under the lid, do not worry !!
Once your timer goes off, remove the pan from the heat, lift the lid off quickly and throw in the tomatoes, and chopped peppers and put the lid back on quickly.
Do not stir, do not taste, do not worry !! Allow the rice to steam in the pan for 20 more minutes.

Spanish Rice
This is a quick and easy way to spice up rice. Saute instant rice with onion, red bell pepper and green bell pepper. Then simmer with tomatoes and tomato juice and you've got a savory Spanish-style rice.
Original recipe yield: 4 servings.
INGREDIENTS:
1 tablespoon vegetable oil
1 1/2 cups instant rice
1 onion, chopped
1 red bell pepper, chopped
1/2 green bell pepper, chopped
1 teaspoon prepared mustard
1/2 teaspoon salt
1 1/2 (14.5 ounce) cans whole peeled tomatoes
1 cup tomato juice
DIRECTIONS:
In a large saucepan over medium heat combine oil, rice, onion, red bell pepper and green bell pepper. Saute until onions are translucent. Stir in mustard, salt, tomatoes and tomato juice; simmer for 5 minutes.

Mexican rice , put a little bit of oil in a large skilett and start to brown at a medium temperature constantly stirring,add diced onions and about to cloves of grated garlic when it is
light brown lower heat and add chicken stock, tomato 2 to 3 tbls
paste, 1 to 2 tbls cumin powder and salt to taste, cover and simmer until liquid is evaporated and then stir before serving.
