in a large, deep skillet - layer the bottom of the pan with this coat of vegetable oil on low heat. Cut up 2 large potatoes, skin and all in chunks, along with onions, bell pepper (if you like). Add smoked sausage, bacon or turkey bacon.9as much meat as you like). Cook until tender. In a separate bowl, scramble 2 eggs. Pour the eggs over the potato mixture. Add salt/pepper to taste/ Stir. Finally top it all with grated cheese. Cover skillet and turn off. The cheese will melt and blend into the mixture of pototes. Garnish with chives and add toast and jelly - and you've got a quick and instant Breakfast/Brunch.

A southern breakfast dish: Ham with red-eye gravy over grits, served with biscuits and an egg over easy.

Red-Eye Gravy recipe:

thick sliced slab of ham
1 tablespoon sugar
1-2 cups coffee

fry down the ham in a skillet til there is some moisture, add sugar and coffee and simmer. Try it...tis good :)

danish pastries, muffins, coffee, toast, waffles, cereal, fruit, fried breakfast, but the thing I have most often is a chicken and bacon sandwich with mayo. Either that or cake, I know that's disgusting.

Breakfast Burritos - YUM!!

Flour tortillas
Scrambled eggs (make how you like, onions, etc)
Cooked meat of your choice (sausage, ham, bacon)
Cooked potatoes (small cubes or hash browns)
Shredded cheese (cheddar is good)
Salsa (I love the HOT one)

Place one tortilla on plate, put some eggs, meat, potatoes, salsa & cheese in the middle and wrap up - portable version. OR -- pour the salsa on top and eat with knife & fork.

DOUBLE-CINNAMON FRENCH TOAST:

1 cup pure maple syrup
3 tablespoons unsalted butter
2 teaspoons ground cinnamon

3 large eggs
1 cup whipping cream or half and half
2 teaspoons vanilla extract
4 3/4-to 1-inch-thick cinnamon bread or egg bread slices

Bring syrup, 1 tablespoon butter and 1 teaspoon cinnamon to boil in heavy medium saucepan. Boil 2 minutes.

Whisk eggs, cream, vanilla, 3 tablespoons maple syrup mixture and remaining 1 teaspoon cinnamon in bowl. Place bread slices in large baking dish. Pour egg mixture over; turn to coat. Pierce bread in several places with fork. Let stand 5 minutes.

Melt 1 tablespoon butter in heavy large skillet over medium-high heat. Add bread and cook until brown, about 3 minutes. Add 1 tablespoon butter to skillet. Turn over bread and cook until brown, about 3 minutes. Transfer to plates. Serve with remaining syrup.

Serves 2 to 4.

Try an omlet stuffed with spinach, slices of cherry tomatoes, black olives, sprinkle of fetta cheese or sliced (fresh) mozerrella cheese. You can also add parsley or your favorite green herbs.
I like to play with potatoes..add polish or your favorite sausage-chop with: bell pepper, onion, tomato add a little tomato sauce and sprikled with cheese. You can make this tastier with a sprinkle of ground cumin, garlic powder, pepper, kosher salt, etc. This is a great side dish to eggs.

French toast.
Take 2 eggs, mix well, about 1/2 cup milk, mix well, heat skillet to medium while you prepare this. you can add vanilla to mixture if you wish 1/2 tsp. soak bread about 2 seconds per side, place on griddle, cook to golden brown each side. place butter on it after you plate it. sprinkle sugar and Cinnamon to taste....enjoy

Grilled Cheese bacon and egg sandwich is good.
Also blueberry pancakes with blueberry syrup.
Biscuits and sorghum is good, as is biscuits and sausage gravy.
Onion and cheese omelet is also good.
