I disagree with all the answers except with the person saying that bacteria and germs are killed at 165 degrees. Since vegetables area roasted at 425 degrees, there is no need to ruin the vegetables' surface with water (thus steaming the vegetables). Keep them dry, sprinkle with olive oil, and enjoy!

always wash fruits or veggies before using, even if cooking them. pesticides, maybe rodent droppings in the warehouse, or who knows what the pickers have on their hands may be on them. safer to wash.

Its better to do so to remove any dust or dirt.Though all germs are killed at 165 degrees F.If u have water shortage dont do so..loll

I always do because of pesticides. Even if you buy organic, you should wash off the dirt.
