Rice with Carrot, Lemon, Onion and Mint Recipe

We found a "three-flavor" rice recipe in a recent Parade magazine - long grain white rice accented with carrots, lemon, and mint. Excellent served with roast chicken. I can't quite figure out why Parade called it "three-flavor"; there are many discernable flavors here - garlic, lemon, carrot, onion and mint. An easy way to dress up rice!
1/2 cup extra virgin olive oil
1 onion, diced
1 carrot, diced (1/4 in)
1 Tbsp minced garlic
Salt and pepper to taste
3 1/2 cups water
Finely grated zest and juice of 1 lemon
1 1/2 cup long grain rice (make sure that you are using long grain rice)
4 scallions, thinly sliced on the diagonal
1/4 cup chopped fresh mint leaves
Heat the oil in a pot over low heat. Add the onion and carrot - cook 10 minutes. Add the garlic, cook 3 minutes more. Season with salt and pepper. Bring the water, lemon zest and juice to a boil. Stir in the rice, reduce the heat and simmer, covered, until the rice absorbs the liquid and is tender, about 20 minutes. Remove to a bowl, add the scallions and mint, and fluff with a fork.
Serves 6.
Per serving: 280 calories, 44g carbs, 4g protein, 10g fat, no cholesterol.
Notes: If you use a rice other than long grain white rice, you will need to adjust (most likely downward) the amount of water needed. I forgot this and when I made this dish again using medium grained instead I ended up with rice soup.

Long Grain and Wild Rice Mix Recipe
A mix that will make a great gift or a pantry favorite.
1 cup long grain brown rice
1/2 cup wild rice
1 tablespoon dried parsley
2 teaspoons spike seasoning or all-purpose seasoning
1 teaspoon dried thyme
1/2 teaspoon salt
Mix ingredients and store in an air-tight container.
Attach these instructions.
To prepare, bring 3 1/4 cups water to boil in a medium saucepan.
Add Rice Mix, cover, and simmer for 50 minutes.
Remove from heat, and wait 10 minutes before fluffing with a fork.
Use Long Grain white rice to decrease cook time to about 35-40 minutes.
Wild rice takes quite awhile to cook.

In a large saucepan, bring the water to boil. Add salt and rice; cover and reduce heat. Simmer for 20 minutes, without lifting cover.
Remove from heat, gently fluff rice with fork and let sit for a few minutes with the cover off. Fluff again and serve.
Serves 3 to 4.
Note: The formula for long grain rice is normally 2 parts water, 1 part rice. However, when using Jasmine rice, it is best to use less water, about 2 tablespoons less water per cup used.

The 2-to-1 ratio is correct for stove-top cooking of rice. I bring the water to boil, mix in the rice, cover the pot, turn the heat to low and let it cook covered for 21 minutes. Be sure to let it cook for the full time without lifting the lid.
After the basic rice is done, you can mix it with alot of things, or serve it on the side as the starch for most any meal.
With leftovers, it's a good base for many things.
Spanish rice: Add salsa to the cooked rice.
Chinese: Stir fry some meat and veggies and serve with the rice
Enjoy.

There are lots of great recipe websites out there. I like emeril.com; weeklyrecipes.com; madsrecipe.com; and you can also do a Yahoo search for specific recipes. You might also want to do a search on how to store grains - depending on what part of the country you live in, it can invite unwelcome critters or mold if not stored properly. Hope this helps.

this rice is perfect for making mutton, chicken, egg, and veg. biryanis.
soak 1 or 2 cups of rice in water for 20 minutes, before you start cooking,
prepare stir- fried chicken, mutton, or boil eggs, or steam mixed vegetables like french beans, potato, cauliflower, carrots, etc. keep aside. wash the rice, but do not rub the grains, hence they may break, strain and fry golden in butter, in a deep pan, add hot water proportionately, half- cook, and remove from fire. add the mutton, chicken or veg.s, to the rice , turn and mix properly. keep it on fire, medium heat, cover with lid. check from time to time, and add some water if required, rice should not over-cook, the grains will nicely separate, an dyou can do random checking, by pressing oe or with your finger to see if coked or not.
remove from fire, serve hot by garnishing with chopped coriander, raisins, fried cashew-nuts, almonds, etc. for eggs, you have to just peel hared-boied eggs, cut them into halves, and put them in the biryani. serve with pickles, yogurt, sliced cucumber, onion rings, etc.

put it with lentils or beans. yum. or any kind of meat.
use it just like you would potatoes. rice is great stuff.
takes a long time to cook, though. try cooking and freezing it then you can add it to soups and any concoction you make.
