Depends on what you did. Would the moment call for something humours to get you out of the embarrassment or pleading on hand and knee for the mercy of the court? A straight , "I'm sorry," couldn't hurt for one's conscience either.
Like I said depends on what was the so called stupid thing in the first place...

Act natural. Say something like "Wait why did I say that? That was stupid of me to say. Anyway....." go on with your conversation. Or if you know you will never see the person again have some fun with it. Go along with what you said. Make them think you are a crazy person. As long as your friends and family don't know the person. LOL!
