I just did this drive a couple months ago! =)
Check out the elephant seals on the beach near San Simeon. They're fat and cute.
If you get to Carmel around mealtime, I highly recommend eating there. Just pick any place on the downtown strip, and spend some time checking out the galleries. Monterey -- check out the aquarium. SLO is a cute town, and there's this restaurany called Big Sky Cafe (www.bigskycafe.com). Their sesame ginger noodle salad is to die for!

Stop at Solvang. Lovely little Dutch town, very touristy, but has some fantastic restaurants. Also think about the Winchester House. I'm not sure of the name of the town, but it's fascinating. Sarah Winchester kept her house under constant construction for something like 50 years because she believed the ghosts who lived there told her to.

You should certainly check out San Simeon (Hearst Castle) and Carmel. You could also stop at Nepenthe, where Orson Welles built a house for his then-wife Rita Hayworth. Now it's a casual burger joint with a fantastic view.

Hi there! Most people stick to Highway 1. Monterey is there, San Luis Obispo is there, etc. In fact, Rachael Ray (foodnetwork.com) just did an episode following that same route for her Tasty Travels show last night...I suggest going to foodnetwork.com and looking for that show, some of the restaurants looked really yummy! =) Have fun, and I hope you are going by convertable!
