As a tomato ages, there are chemicals called carotenes that are produced. These are found in most vegetables that have a red or orange color, such as carrots (where the name comes from). These chemicals are just another type of pigment that plants produce.

sunlight triggures the hormones primaryly auxin and ethylene. If you pick a green tomato put it in a brown bag and seal it up. The tomato should turn red due to the ethylene that is present in the bag due to the tomato.

I think it's the heat that tomato make red and ripe, than sunlight it self. Here in Seattle, we do get sunlight during summer time, but it's not enough to make tomato(those big ones) fully ripe in the regular garden. People often use combination of black plastic cover & sunshine. They need lots & lots of heat!

Sorry, but previous answers are wrong.
There's a molecule responsible for fruit maturation and it is called Ethylene. This is a gas at normal temperature and it is strongly inhibited in cold conditions, that's why bananas can be long term stored in cold conditions, they rippen as soon as they are exposed to normal temp.
Of course each fruit produces its own ethylene. So sun does not turn fruits into maturity, ethylene does.

The fruit are picked when they have reached full size and are still green.
light provides conditions for lycopene carotenoid which gives tomato its red colour which is a carotenoid and considered as useful in treatng cancer
