Crispy Cheese Poppers
1 package (8 ounces) cream cheese, softened
1 fresh jalapeño pepper, stem and seeds removed, chopped
1/4 cup grated cheddar cheese
18 wonton wrappers (from a 16-ounce package), thawed if frozen
1-1/2 cups vegetable oil
In a medium bowl, combine the cream cheese, chopped jalapeño, and Parmesan cheese; mix well. Place a wonton wrapper on a flat work surface. Dip your fingers in a small bowl of water and moisten the edges of the wrapper. Place about 1 tablespoon of the cheese mixture in the center of the wrapper and fold diagonally to form a triangle. Seal the edges firmly with your fingers. Continue with the remaining cheese mixture and wonton wrappers. In a large deep skillet, heat the vegetable oil until hot but not smoking. Fry the wontons in batches for 30 seconds per side, or until crisp and golden. Remove with a slotted spoon to drain on a paper towel-lined platter. Serve immediately.

I am gonna do Mim's Cheese Straws. Mim was my Great Aunt and a in Baton Rouge Lousiana, in the 50's & 60's she was known as the cake lady. Won quite a few awards. Anyway. Here we go.
Cheese Straws
6 table spoons warm butter (I use more if neede to make plyable)
1 1/2 cups flour
1/2 teaspoon salt
1 dash paprika
1 Tsp Lousiana hot sause (not Tabasco)
1 1/4 cup grated x-sharp chedar cheese room temp
5 tablespoons water or a little more if needed
Cut shortening and cheese into dry ingredients. Add water and mix as for pie crust. Place dough in Cookie King Press tube and use any of the following forms: small or large star, bar or small circle. Form dough in long lines on cookie sheet and cut into desired lengths with sharp knife. Separate slightly. Bake at 400 degrees for 9 to 11 minutes or until just before browning. Let cool before eating as they will harden in to crusty cookie like abrosia on the taste buds cheesy thingys.

Bacon Things - 350 degrees
1 lb thick bacon (preferable from the deli, not packaged)
3 cans whole water chestnuts
1 C Brown sugar
toothpicks
Cut bacon slices in half across
wrap bacon pieces around a chestnet and secure with a toothpick
Fry until completely cooked and crispy
Place into a baking pan, sprinkle with the sugar, stirring or tossing to coat completely, bake until sugar is melted and has created a nice caramel colored coating. usually 10-20 minutes
Serve right away or keep warm in oven and rebake at 300 until heated.

Carly's Casserole
1 lb Ground beef
1 8 oz can diced tomatoes
1/4 cup of butter
1 large onion diced finely
1 teaspoon basil
1 teaspoon of garlic powder (or clove of garlic minced)
I package of Velvetta cheese and macaroni
Fry the beef, onion, garlic, basil and garlic till brown. At the same time start the velvetta and cheese and follow the directions (add the 1/4 cup of butter) when done. Mix all when done in a large casserole pan. Cover wtih aluminum foil. Bake at 350 for 40 minutes.
It's a best to freeze or serve immediately. I made this up for my hubby after being in the hospital for a week. He LOVES it!

Bacon Bites
A good friend in Florida was nice enough to share this simple tasty appetizer. Can be made in advance and popped into the oven when close to serving.
1 package bacon
1 jar honey mustard
brown sugar
Cut bacon slices in half.
Spread honey mustard on one side.
Coat both sides in brown sugar.
Bake at 375 degrees F.
for about 20 minutes or until browned.

Pretty, and tasty, but not particularly healthy.
Olive Roll ups
12 (or 16) green olives with pimentos
3 or 4 pieces of white bread, with crusts cut off
softened cream cheese ( or whipped cream cheese)
Take each piece of bread; roll it with a rolling pin so that it is thin.
Spread cream cheese on one side of each slice of bread. Take care to not rip the bread when spreading the cream cheese on it.
Place 3 or 4 olives, end to end across the bread and cream cheese layer.
roll up 1 slice of bread around the olives. like a jelly roll.
You may need to secure the roll with toothpicks if the olives are large.
Refrigerate for at least 30 minutes, covered with plastic wrap.
Slice the bread/olive roll in the middle of each olive.
It will be a circular, bite size appetizer.

Sausage Balls-It'a southern thing...
1 lb Spicy pork sausage
1 cup shredded cheddar cheese
Bisquick
Mix together sausage and cheese, then add bisquick until it makes a play-doh like consistency( I know, appetizing, but that is what it's like).
Roll into 1.5 inch balls, place on a cookie sheet and bake. Serve with dipping sauce of 1 part mayo to 1 part mustard.
These do not reheat well at all! So you have to eat the whole batch when you make them ;)

SAVANNAH SIN
8 oz cream cheese
1 1/2 C sour cream
2 C chopped ham
1/3 C chopped green onions
2 C shredded cheddar
1 tsp worchestershire sauce
blend together
1 large round bread
Cut off top of bread and scoop out. Spoon in
filling and place top back on bread and wrap in foil. Bake 1
hour at 350 degrees..

Baked Spinach and Cheese Dip
1 package of frozen chopped spinach (Defrost and squeeze through clean towel of all water) sit aside
1 cup of Mayo
1cup of Mozzarella cheese
1 cup of Parmesan cheese (grated shaker type)
Combine all ingredients...put in baking dish and bake at 350 for 35 minutes or until cheese's are melted and bubbly...serve warm with crackers or vegetables..delicious

BEER BISCUITS
Ingredients:
3 cups biscuit mix
¼ teaspoon salt
1 teaspoon sugar
1½ cups beer
Methods:
Mix all ingredients and spoon into 12 greased muffin cups. Bake 15 minutes at 425 degrees.
