For night pictures use the flash, or crank up the iso and use a low aperture number.
Use the macro to take pictures of bugs and other up close shots.
Use ev settings to overexpose or underexpose the picture.

I don't have an 800, but I have an F10. On it I turn the dial to SP. Then I use menu to select the moon shaped option. The macro button is used for focusing on stuff very close. I think eV settings are used to make the picture look brighter or darker.
