Pizza Recipe
Dough

3 cups flour
1 tblspn yeast
3/8 cup milk
3/8 cup water
2 tblspn olive oil for thin crust

place 1 cup flour yeast 1/3 cup water blend
add oil and the rest of the water
scrape onto floured board and knead into ball
place in bowl and cover with cloth let stand for 30 min in a warm place
shape into 2 13" pans let stand for 30 min in a warm place

or use a bread machine

Sause

1 1/2 cups tomatoes sause
1 teaspn red pepper
2 teaspn olive oil
2 teaspn oregano dried
2 teaspn parmesan cheese grated

Toppings

2 oz meat or tofu
1/2 cup sause
onions
green peppers
tomatoes sliced optional
2 oz cheese mix of mozzarella, monteray jack, swiss, parmesan
1 cup pineapple slice
1 1/2 cup pizza dough

preheat oven 395 degrees, bake 40-45 min

For the crust we always use hot roll mix (from a box); there are usually modified modified instructions for pizza crust on the box. We usually make homemade pizza after we have spaghetti and meatballs and use the leftover sauce and meatballs on the pizza. You can used the canned sauce meant for spaghetti (you might want to add a little Italian seasoning) or they also make some specially labeled as pizza sauce, but I think it is too sweet, kind of similar to the sauce they use at Papa John's. If you are using leftover spaghetti sauce with meatballs or meat, be sure to cut up the meat into small enough pieces (halves or quarters of meatballs are a good size) and you can add a small can of tomato sauce (not spaghetti sauce) if you don't have quite enough. I like to put the meatballs right in with the sauce, under the cheese. We usually use preshredded cheese in a 'pizza' or 'italian' mix, and then we grate some cheddar on top of that. Then just add your toppings--fast and easy. The box dough probably takes 20 minutes or so, then you bake it for about another 20, depending on the size and thickness of your pizza.

Get yourself some Arabic bread, or if you cannot find same, some large round pitta bread. (bought pizza bases are rotten and will make everything taste yucky) Smear on some tomato puree, put on any other ingredients you like or have at hand. Yellow & red peppers. Sweetcorn. Mushrooms. Onion. Salami, whatever you fancy. Season generously with salt and pepper, use cheese of your choice a mix of buffalo motzerella and chedder seems good to me, and finally sprinkle dried mixed herbs over the top, before you pop it in the oven. Volia! Quick and easy "pizza" from what you could just have hanging around in your fridge and store cupboard!

I have been making this pizza dough since I was about 9 years old. It’s very easy. I use a Kitchenaid mixer and a dough hook, but you can also mix it by hand. Use a good-sized bowl if mixing by hand, as it will rise quite a bit. You can make it in advance if you want, but it doesn’t take very long. If I want pizza and have all ingredients on hand, it takes an hour from when I start making the dough to when I pull the finished pizza from the oven. 1 pkg rapid-rise yeast (or 2 1/4 teaspoons if you have loose yeast)--bread machine yeast is good too even if you don’t have a bread machine 1 cup warm (not hot) water 1/2 tablespoon salt 2 teaspoons olive oil (darker is better) 2 1/2-3 1/2 cups flour olive oil spray optional: add 1 teaspoon each of garlic powder (not garlic salt), onion powder, and/or oregano Makes 2 pizzas Preheat your oven to its lowest setting. Arrange the racks so that the mixing bowl will fit. As soon as it’s heated, turn it off. Pour the water into the mixing bowl. Add yeast, salt and oil. Mix gently. Add spices, if desired. Add 1 cup of flour, mix thoroughly. Keep adding flour, 1/2 cup at a time, until the dough forms a ball and the sides of the bowl are clean. If you add too much flour and it gets dry and breaks apart, add a tiny bit of olive oil (maybe 1/2 a teaspoon). Lightly spray the top of the dough ball with olive oil spray and put into warm oven for 15-20 minutes. You can punch it down halfway through to re-rise if you like but it’s not necessary. If you are not going to eat immediately, cover the bowl tightly with plastic wrap and put into fridge. When you are ready to make the pizza, heat your oven to 450 F (fix the racks so they are even in the oven). I use regular simple metal pizza pans because I like a crispy crust; you can use a baking stone but that makes a softer crust (and some of them require pre-heating). I use those same pans for cookies. So I am not sure if you are saying you have round pans or square pans. You can use a square pan, of course. Shape doesn't matter to the taste. Halve the dough and roll it out using a rolling pin or hand-stretch it. Spray the pizza pans with olive oil spray. Make the dough slightly larger than the pans, place onto the pans and then hand-roll the edges to form the crust. Swirl a tablespoon of olive oil onto the dough before adding sauce & toppings; I like the spray the rolled edges with olive oil as well. Cook for 15 minutes; halfway through switch the pans’ positions so they cook evenly. If you want to freeze this dough, don’t let it rise before you seal it in plastic. Thaw it in a large covered bowl on the counter; when it starts to rise then put it in the preheated (lowest setting) turned-off oven as above. It takes a couple of hours to thaw.

I have a very quick and easy recipe for pizza. But it's not your regular pizza. It's called Thai Chicken Pizza. I was skeptical when I made it, but it is very good!!! Definitely try it! This episode of Rachael Ray is on the Food Network this Friday at 6 PM Eastern Time. I have made modifications to the recipe. I add extra peppers(usually green) and put zucchini on the pizza as well. However, I don't put anything else on the pizza after I put the chicken on it. But that's just my personal choice. I think this has to be my fav pizza! Hope you like it!!! Thai Chicken Pizza Recipe courtesy Rachael Ray

1 pizza dough, any brand
1/2 cup duck sauce or plum sauce
1/2 teaspoon crushed red pepper flakes
1 package (2 cups) shredded provolone or Monterey Jack cheese
1/2 red bell pepper, thinly sliced
1 tablespoon vegetable oil
2 tablespoons soy sauce
1 rounded tablespoonful peanut butter
2 teaspoons hot sauce
2 teaspoons grill seasoning (recommended: Montreal Steak Seasoning) eyeball it
4 chicken breast cutlets, 1/2 pound
2 tablespoons honey
2 tablespoons rice wine vinegar or cider vinegar
1/4 seedless cucumber, peeled and cut into matchsticks
4 scallions, chopped
1 cup bean spouts, a couple of handfuls
Palm full cilantro leaves, chopped
1/4 cup chopped peanuts, 2 ounces

Preheat oven to 425 degrees F.
Form pizza crust on pizza pan or cookie sheet. Top with duck or plum sauce - spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese and peppers. Bake until golden and bubbly, 15 to 17 minutes.

Preheat a grill pan over medium-high heat. Combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning. Use the microwave to loosen up peanut butter if it is too cold to blend into sauce, 10 seconds ought to do it. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken cutlets 2 to 3 minutes on each side, until firm. Slice chicken into very thin strips.

While chicken cooks, mix honey and vinegar and add the cucumber. Turn to coat evenly.

Top the hot, cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over the pizza. Garnish pizza with peanuts, cut into 8 wedges and serve.

Barbecued Chicken Pizza:

Meredith McGowan likes devising original combinations to top her family's favorite dish - pizza. McGowan makes dough from scratch, but prebaked pizza crusts - available in many supermarkets - are an easy shortcut.

1 pound boned, skinned chicken breasts
1/3 cup prepared barbecue sauce
Salt and pepper
4 slices bacon (4 oz. total), cut into 1-inch pieces
2 baked pizza crusts (7 to 8 in., 5 oz. each; see note above)
1/4 cup cream cheese (2 oz.)
1/4 cup canned diced green chilies
1/2 cup shredded jack cheese
1/4 to 1/2 teaspoon hot chili flakes

1. Rinse chicken and pat dry. Place in an 8-inch baking pan and coat with about 2 tablespoons barbecue sauce. Sprinkle with salt and pepper. Bake in a 350° regular or convection oven until no longer pink at the center of the thickest part (cut to test), about 20 minutes. Let stand until cool enough to handle, then tear into bite-size chunks. In a small bowl, mix with remaining barbecue sauce.

2. Meanwhile, in a 10- to 12-inch frying pan over high heat, stir bacon until browned and crisp, about 5 minutes. With a slotted spoon, transfer bacon to paper towels to drain.

3. Place pizza crusts on a 12- by 15-inch baking sheet. Spread each with about 2 tablespoons cream cheese. Spoon chicken in sauce evenly over both crusts; top with bacon, green chilies, jack cheese, and hot chili flakes.

4. Bake pizzas in a 400° regular or convection oven until cheese is browned and bubbling, 15 to 20 minutes. Transfer to a board and cut into wedges.

Yield: Makes two 8-inch pizzas; 2 or 3 servings
