Well, pasta is always an economic choice as is rice. One thing I like is pasta served with turkey sausage and tomatoes. I brown the turkey sausage then take it out and remove casing and chop, add 1 diced carrot, one diced rib of celery and one finely chopped small onion or half of medium one and saute in the same pan, when they are fork tender add one large (15oz) can of chopped tomatoes (either seasoned or not) one small can of plain tomato sauce, two small cloves of garlic,2 bay leaves and oregano, some red pepper flakes if you like and salt and pepper to taste (go easy on the salt until right before you serve it)
This is really easy and makes a lot for not much money, you can vary it by adding in grated Parmesan, or even adding in dollops of ricotta or cottage cheese if you like. Also try allrecipes.com, they have a lot of great recipes that might be perfect for you.

First... plan out your menu for the week. Mine usually looks something like this:

Mon: whole roasted chicken (a small one is about $3 at the store!) with veggies (buy frozen, you get more for you $$)

Tue: chicken n something dish, using leftovers from Mon. I like chicken n dumplings: boil the chicken carcas from the night before to loosen up all the left overs and make the water yummy. Then remove bones, add some veggies and cook for about 30 more minutes. Mix bisquick (also cheap for a large box!) according to directions and drop in dumplings!

Wednesday: meat loaf- 2 # of meat should be pleanty for 3 adults and should leave left overs.

Thursday: stir fry!! Chicken or beef or veggie... use less meat than you think you need, just chop it up smaller!

Friday: Left-overs from Wed &/or Thurday

Saturday: bbq! chicken or hamburgers on the grill with fries! cheap and easy!

Sunday: Pot roast!! get a 3-4# roast and throw it in a crockpot with onion, potato, carrot with a little water and a packet of onion soup mix... cook all day (8 hrs- low heat) and voila... sunday pot roast for dinner!! If you don't have a crockpot, you can acchieve the same results with the reynolds oven bags. Read the directions and throw it in the oven! Takes about 2 hrs!!

Good luck!! Remember... PLAN PLAN PLAN PLAN!!!
Plan your menu in advance
Plan your shopping list!
Plan on not buying a lot of extras!
Plan for leftovers!!

We've been doing this for sometime now, I plan my menus for 2 weeks (we get paid every 2 weeks!) and then spend about $100 when I go shopping! I also make sure to keep staples around all the time: spaghetti (cheap!) and sauce (not so cheap, but important!), hamburger (buy it when it's on sale and freeze it!) and hamburger helper (for those nights you really don't feel like cooking much!)

It's really not so hard. Just have discipline at the store not to throw in a bunch of crap. :-) Good luck!

Do you like vegetarian food? Let me know & I'll send you some info. Vegitarian food is cheap as your not forking out a fortune for meat! I ate vegitarian for a few years and really noticed the savings. Rice, pasta, lentil and cous cous are good fillers too.
