Christ's body and blood... however, depending upon what religion you are speaking about, the bread and wine either symbolizes Christ's body and blood, or actually IS. In regards to Catholicism, the belief is that through the process of transubstantiation, the bread and wine become Christ. There is of course more to explain, but that is a completely different question.

The are symbols for the life of Jesus and what he have told us, not to be forgotten, that's why we go to community to be remembered of his life and his words by eating the bread and drinking the wine. I have been told that some churches use water and some cheap and unhealthy bread - it can't be true or could it?

The bread is a symbol of the Body of Christ which was sacrificed for us at the crucifixion.
The wine is a symbol of the Blood of Christ, which was spilled by violence for us.

Both are symbols of the sacrifice Christ made for us so that our sins can be forgiven.

the bread represents the body of christ which is, figurativly, jesus body and literally the church.
the wine symbolizes jesus blood that was shed for the forgivness of sins that people might have life, when they deserved death. the body has no life without the blood and so the church has no life without jesus.
